CRANBERRY ORANGE LOAF CAKE

I love the holiday season for various reason, the cold weather, festive vibes, winter coats, boots, Christmas tree, shopping, celebrating with friends and most of all baking for friends and family. Here’s one delicious recipe which is easy and tastes amazing. So don’t forget to SAVE IT!

Streusel
* 1/4 cup all-purpose flour
* 2 Tbsp granulated sugar
* 1/2 teaspoon ground cinnamon
* 3 Tbsp unsalted butter, cold and cubed
Bread
* 2 cups all-purpose flour
* 1 tsp baking soda
* 1/2 tsp salt
* 1 large egg, at room temperature
* 1/2 cup packed light or dark brown sugar
* 1/2 cup granulated sugar
* 1 cup buttermilk, at room temperature
* 1/3 cup vegetable oil
* 1 tsp pure vanilla extract
* 2 tsp orange zest
* 1 cup (110g) cranberries, fresh or frozen (do not thaw)
* 1/2 cup chopped pecans/ walnuts
Glaze
* 1 cup confectioners’ sugar
* 2 Tbsp or more orange juice

👉🏼 Preheat oven to 350°F and spray a 9x5 inch loaf pan with nonstick spray.
👉🏼 Streusel: Whisk the flour, sugar, and cinnamon together in a medium bowl. Cut in the cold butter with two forks until mixture resembles pea-size crumbs, refrigerate until ready to use later
👉🏼 Bread: Whisk the flour, baking soda, and salt together in a large bowl. In another bowl, whisk the egg, brown sugar, and granulated sugar together until combined. Whisk in the buttermilk, oil, vanilla, and orange zest. Pour the wet ingredients into the dry ingredients, then whisk to completely combine, fold in the cranberries and nuts
👉🏼 Pour the batter in the loaf pan, top evenly with streusel, pressing the streusel down gently into the top of the bread so it sticks.
👉🏼 Bake the bread for 45 to an hour until a toothpick inserted in the center comes out clean. Cool bread completely in the pan set on a wire rack.
👉🏼 Glaze: In a small bowl, whisk the confectioners’ sugar and orange juice together, make it of a dripping consistency, pour over the bread with a spoon
👉🏼 Slice and serve and store the leftover bread at room temperature for 1 day or in the refrigerator for up to a week.
