🍅 If you have more tomatoes than you know what to do with, try this.

Slow roasted garden tomatoes. Simple food at its absolute best.

There seems to be an abundance of tomatoes in everyone’s gardens at the moment, and this is one of my favourite ways to enjoy them.

My aunt’s glorious homegrown tomatoes, lemon thyme from my garden, a few cloves of garlic, a generous glug of beautiful @back2roots.uk extra virgin olive oil and a good pinch of fleur de sel. Honestly, you don’t need much more ❤️.

Simply slice the tomatoes and arrange them on a lined baking tray. Add the garlic and lemon thyme, drizzle generously with olive oil and sprinkle with fleur de sel.

Slow roast at 130°C/ 110°C fan/ 266°F/ Gas Mark ½ for around 3 hours, until wonderfully soft, sweet and concentrated.

Pile onto toasted bread, finish with another generous drizzle of olive oil and enjoy.

David and I wolfed ours down before remembering to take a photo of the finished dish… which probably tells you everything you need to know 😂!

A huge thank you to Thekla and Nikos at Back2roots for my fabulous organic extra virgin olive oil and fleur de sel 🫒❤️. Their excellent oil is made from Koroneiki and Athinolia olives from Lakonia, Greece, is high in polyphenols and has a beautiful peppery finish.

What is your favourite way to enjoy your homegrown tomatoes 🍅? And if you have a garden overflowing with tomatoes, save this one for later!

Wow, what a blur of a few weeks, but what a success!

It’s mad to think that in 2020 I was cooking crew food pretty much on my own for a gathering of 400 people, and now Medicine is a 10,000-person festival and we’re running nine different food and drink venues across the site.

Alev ran the Medicine Café with Carlotta as head chef, Karma ran our two elixir bars, Meg somehow managed four cacao bars, and Andrea ran our two pizza spots.

We try to source as much of our food as we can locally and organically, working with people like Hodmedod’s, Suma and Essential Trading Co-operative. Loads of the veg this year came from Andrea’s land and The Farmacy’s biodynamic farm, alongside wild ingredients gathered by Gio and his brilliant team of foragers.

I really think the Medicine Café went up another level this year. Carlotta and Thet absolutely smashed it, putting out proper healthy, nourishing food and snacks all weekend, and even managing a full roast dinner using loads of produce from The Farmacy.

A massive thank you to Mahalia for decorating the Medicine Café this year, genuinely the best it has ever looked, and to Millie for all the beautiful flowers that brought the whole place to life.

And a huge thank you to all our managers who kept everything moving: Asher, Ezme, Mark, Thet, Lottie, Steph, Maya, Jamie, Beth, Petay, Ellie and Francis. And of course all the chefs, front of house teams and guardians who worked their arses off throughout the festival. None of it happens without you!

A huge thank you to Bogdan for all his help, guidance and support throughout, and to Jenna and Zak for constantly backing us and trusting us to keep pushing the vision of what food and drink at Medicine can be.

Also a big thank you to Back2Roots Olive Oil, Hobbs House Bakery and The Coconut Collaborative for supporting us with some amazing produce and products.
There are so many people behind the scenes who helped make it happen, and I’m sure I’ll have forgotten someone!
