pumpkin chai cinnamon buns 🎃🤎 tell me pumpkin meets masala chai isn’t the autumn collab you didn’t know you needed?! Buttery, pillowy buns, swirled with warming chai spices 🫶🏽✨

A little flavour exploring, a little Punjabi magic, a LOT of cinnamon swirled goodness. best enjoyed warm with a cup of chai and absolutely no intention of sharing 😉

I keep finding psychology in the sourdough community, often in places no one meant to put it.

But this time, it was not exactly hiding.

@bakewithjack was saying it out loud.

He had chosen to spend more time turning ordinary little loaves into leaves. He could have shaped them into rounds, finished sooner, and moved on. But as he pointed out, what exactly are we doing with all the time we keep saving if we only use it to rush through the next thing too?

Sometimes, he suggested, we might deliberately choose the slower, harder, more effortful way simply because we want to be doing that thing.

He also said that his students often describe breadmaking as therapeutic.

Psychologically, that makes complete sense.

A chosen, manageable challenge organizes our attention. When a task asks enough of us, our hands, eyes, senses, and concentration have to come together in one place. There is less mental space available for replaying the past, anticipating the future, or following every thought that tries to pull us elsewhere.

The mind is not being told to be present. It is being given something that requires presence.

That may be why effort can sometimes feel therapeutic. Not because difficulty is inherently healing, and not because the harder way is always better. It is because absorbed attention can interrupt scattered attention. The task gathers parts of us that have been moving in different directions and brings them back into the same moment.

Efficiency is valuable when it removes difficulty that adds nothing. But sometimes the effort is not an obstacle between us and the experience.

Sometimes the effort is the experience.

Jack made the bread and named the lesson. I just wanted to follow the psychology a little further.

This might not be about bread.

Basic sandwich loaf came out really good. Maybe like this more than the sourdough. Made delish grilled cheese and PBnJs.

First sourdough since lockdown! It'll take several tries before I regain my intuitions, but I'm back to my favourite recipe, the one from @bakewithjack book. Big thanks to @sheila.keynton for the starter (and to @minimissbread for Sheila's starter-starter!) Onwards and upwards.

The Ultimate Savory Bomb
My homemade Oat Loaf meets a fusion of Mediterranean and Asian flavours. Sardines, tuna, and green olive paste, balanced with a kick of Dijon mustard and the zing of pickled ginger. A proper sarnie for a serious lunch!
A Symphony of Textures on a Homemade Oat Loaf Base
🛒 Your Ingredients
The Base: 2 generous slices of homemade oat loaf (or a sturdy multigrain bread).
The Engine Paste:
1 can of sardines in olive oil (drain and use some oil).
2 cloves of garlic, finely crushed.
6-7 green olives, crushed.
1 tsp mango chutney (the secret sweet-savory balance).
The Top Layers:
Flaked tuna (for texture and volume).
1 hard-boiled egg, sliced.
1 tsp Dijon mustard (for that essential kick).
Fâșii (strips) of pickled ginger (the surprise element).
Greens & Seasonings:
Fresh lettuce leaves (your bed of freshness).
Dried oregano.
👨‍🍳 Step-by-Step Preparation
Creating the Umami Core:
In a small bowl, combine the sardines (using some of the can’s oil), crushed garlic, green olives, and the teaspoon of mango chutney. Use a fork to mash and vigorously mix them until you achieve a dense, fragrant, and slightly chunky paste.
Preparing the Base:
Place the slices of oat loaf on a clean cutting board. Lay a generous bed of fresh lettuce leaves on one of the slices. This lettuce acts as a barrier, protecting the bread from soaking up the fish oil.
Layered Assembly:
Spread the sardine and olive paste directly onto the lettuce bed.
Evenly distribute the flaked tuna pieces over the paste.
Arrange the slices of hard-boiled egg on top of the tuna.
Flavor Finishing:
Dab small points of Dijon mustard onto each egg slice.
Place the strips of pickled ginger on top—these will cut beautifully through the richness of the fish and egg.
Generously sprinkle oregano over everything for that final herbaceous note.
Completion:
You can top it with the second slice of bread and press lightly to fuse the flavors, or leave it open-faced for a stunning presentation.

If you’re thinking about making sourdough - give it a go. But don’t be put off by some people on social media who are making it complicated. I follow @bakewithjack and have had success 100% of the time. If I can - you can. #sourdough #bread #wellbeing.
