Guys… that is a jammy marinated quail egg on the cocktail skewer. I prayed to the savoury cocktail god and she answered with the oyako tini from bar Bellamy in Carlton north 😱 like a glass of chilled rich udon broth 🍜 sake, dashi vermouth, mirin, chicken bone. The jammy marinated egg was just the jammy marinated egg on top!! Whole cocktail list at this place is always so mysterious and fun 🕵️‍♀️ food is also always incredible mmmmm yumyum it was a happy Sunday

BOULEVARDIER.

Buffalo Trace Bourbon • Saison Rabarbaro • Beetroot Vermouth • Raspberry Mistelle • Cacao Butter • Aerated Choccy.

I’m not a huge fan of classic BVD’s, but I do like chocolate and raspberry (beetroot is fine), so I’ll call this a success!

Also, aerating chocolate is way, waaay more trouble than it’s worth.

Also, cheers to @t_opie for having a beetroot vermouth recipe available online that I could adapt a bit. I would’ve been flying blind without it 🙏🏻

Probs about 8 or 9 of these left @bar.bellamy

2026 Person of the Year VIC presented by Jack Daniel's Bonded
Danielle Whitehart

Danielle Whitehart is the host and co-owner of Bar Bellamy, the Carlton cocktail bar she opened with partner Oska Whitehart in 2023. Bar Bellamy’s popularity in large part relies on the warmth of its welcome as much as on its drinks, and that is thanks to Whitehart setting the tone. The room placed third on this year’s list and took Best Bar Eats for a second year in a row. Danielle Whitehart is an outstanding figure in the Melbourne bar scene, and is Victoria’s 2026 Person of the Year.

2026 Best Bar Eats VIC presented by Estrella Damm

This neighbourhood cocktail joint goes from strength to strength, Bar Bellamy brings together everything good about cocktails, drinking, and hospitality in one small neighbourhood space. The drinks list changes regularly — once the prep or a particular ingredient for a drink is done, they retire the drink and move onto the next, delicious cocktail. They’re also home to some great food — hence the title of Best Bar Eats in 2025.

More from Aus! One thing I always find fascinating is how much a landscape can shape flavour. It was so amazing to see this brought to life by travelling through Victoria and Tasmania, visiting distilleries, their settings, and spending time with the people behind them.

Whether wandering around LARK in Tasmania, chatting with Stuart Gregor about Australian bars and drinking culture, or visiting producers including Four Pillars, Killik Rum, Melbourne Gin Company, Marionette, The Gospel Rye and Little Lon, every stop told a slightly different story about place, ingredients and the people bringing them together.

We often talk about spirits through the lens of production techniques, but spending time here reminded me that culture (food is culture!), community and landscape are just as important. Every distillery reflects its surroundings in a different way, and that’s what makes exploring flavour so endlessly fascinating.

Huge thanks to everyone who welcomed us in, shared a dram, came to hear me talk, answered endless questions and gave us a glimpse into what they’re building. Australia continues to be one of the most exciting places in the world to explore, and I already can’t wait to come back! 🦁❤️🐨
