Did you notice what I forgot to add to the video? 👀

TEPACHE🍍

• Scraps from 1 pineapple — pulp & peel
• 1 cinnamon stick
• Zest of 1 orange + 1 grapefruit
• 2 cloves
• 250 ml grapefruit juice
• 40 g fresh ginger — you can leave the skin on
• 3 g fresh chili
• 150 g sugar
• 1.5 L water

METHOD

Wash the pineapple, citrus and ginger thoroughly. Make sure your jar and all the equipment you use are clean as well.

For the water, I recommend using filtered water. You can also boil it first and let it cool completely.

Cover the jar with cheesecloth or a clean cloth and secure it with a rubber band.

Leave it to ferment in a dark place for 3–4 days.

Want to see what happens after fermentation?
Comment “Part 2” and I’ll show you the next step. 🍍

Here are some bars I managed to visit while I was in Yerevan, Armenia.

There was some downtime at night after all the scheduled events so I decided to go look around. Everywhere was so walkable. Unfortunately, there were a few more i wanted to visit but ran out of time 😅

Thanka for the amazing hospitality!

BAr Phoenix : The showcase bar of Ararat Brandy where all the signature cocktails are brandy based. They also run a bottled cocktail program, aged in brandy casks. The bottled cocktails can be bought and brought home for a cool gift. Bonus, i think they sell Ararat bottles as well, so if theres no time for the museum, this is a must visit.

Omg that mosaic wall. I die.

The Bird Cage : On the second floor of Bar Phoenix, The Bird Cage is a French Polynesia inspired bar with beverages named after endemic birds. It reads tiki on paper, but leans more like a cool classic vibe kind of bar. Everyone is super friendly and I even had a little tasting of some local gin. The bar shelf has some gems in it like some old Nikka Bottles and some limited edition expression of different brands.

Pablo: High energy bar with higher energy bar people. If i wanted to go clubbing and drink at the same time, this would probably be the place.

Piccolo Peoples Bar : Its like this small cool European bar with good classic leaning leaning cocktails. Another chill place to hang.

Minas : Literally everyone told me to stop here so I did. I missed it twice because it was inside this building called The Collective. The space is a tribute to the artist Minas Avetisyan ( thus all the art). It is swanky, cozy, and loungy at the same time. At one point, there was a tray of multi coloured shots going around.

Process Bar: I asked for directions twice but it was worth the google translate. Process is an underground speakeasy bar ( meaning there are stairs going down)
Cozy industrial design and an experimental lean beverages. I think a lot of things are made in house too
..? I believe they have vinyl / DJ sets some nights too but I was there almosy right at opening and might have missed it.

Daboo : It is right on the Cascade area but has this neighborhood vibe to it. I was told they expan

Zero waste isn’t only about using every part of an ingredient.

It’s also about seeing potential in the things we usually throw away.

I collected these wooden tequila bottle caps and gave them a second life as candle holders. 🕯️

Because zero waste goes beyond the kitchen —
it’s in the bottles, packaging, materials, and all the little things around the bar.

Sometimes, all it takes is a little imagination. ♻️
