In our house, a recipe photo is basically a love letter. 💌

She sent me a picture. No name, no recipe...

Turns out it was garlic butter chicken skewers with avocado walnut pesto. So I fired up the Pellet Joe with Bear Mountain pellets and got to work.

The rub does the garlic butter work. The smoke does the rest.

Recipe:
Cut chicken breast into chunks, hit it with Heath Riles Garlic Butter rub, and thread on skewers. Run them at 350 until the chicken hits 165.

Avocado Walnut Pesto
1 ripe avocado
1/3 cup walnuts
1 cup fresh basil, packed
1 garlic clove
2 tbsp lemon juice
Zest from 1 Lemon
1/4 cup olive oil
1/2 tsp salt & pepper
2 tbsp water, plus a splash more if needed

Blend everything until smooth. Spoon it over the skewers right after they come off the grill so it stays creamy and bright green.

Do you and your spouse share recipes like it's a love language? Tell me who sends them in your house 👇

Tri Tip

Don't skip one of the most important steps in BBQ. The rest. It allows those juices to redistribute and allows the muscle fibers to relax, resulting in a much more tender and tastier final product. The @chefstemp Final Rest Blanket is the perfect environment for your meat to take a little snooze before hitting the cutting board. Check out the full process on this simple tri-tip!

Ingredients:
• 1 Tri-Tip
• Golden Steer Sergio's Seasoning
• Golden Steer Pepper Mafia
• 4 Tablespoons Beef Tallow

Directions:
1. Season tri-tip with @goldensteer Sergio's Seasoning and Pepper Mafia. Leave on the counter for 45 minutes then prepare the grill.
2. Preheat the @webergrills to 350 for 15 minutes with the lid closed. Place meat in the center of the grill and leave undisturbed. After 10 minutes flip it. Allow to cook until it reaches 130 internal then pull with @bbqaidtools tongs.
3. Spread half the tallow on a piece of butcher paper then add the meat on top. Add the rest of the tallow to the top of the meat then wrap tightly. Place inside a Chefs Temp Final Rest Blanket and allow to rest a minimum of 20 minutes.
4. Remove from paper and place on a @bandito_boards . Slice against the grain with a @kumaknives then drizzle with juices from the butcher paper. Serve immediately.

Honey Bourbon Pork

It was finally time to put the @chefstemp Pro Temp S1 to work! This dish is a childhood favorite of mine, but don't make my same mistake. RESERVE THE MARINADE (sorry mom) !! It becomes a delicious gravy that really pulls the plate together. Served over mashed potatoes, this dish can be elegant and delicious at the same time! Save this one and check out the full process below!

Ingredients:
For The Marinade:
• 1/4 Cup @kikkomanusa Soy Sauce
• 1/4 Cup Honey
• 1/2 Medium Yellow Onion Diced
• 1/2 Cup Lemon Juice
• 1/2 Cup @jackdaniels_us Tennessee Honey
• 1 Tablespoon Minced Ginger
• 2 Tablespoons Olive Oil
• 4 Cloves Garlic Minced
• 1 Package @swift__meats Pork Tenderloins
For The Gravy:
• Reserved Marinade
• 1 1/4 Cup Water
• 3 Tablespoons All Purpose Flour
For serving:
• Mashed Potatoes
• Parsley

Directions:
1. In a @cambromfg H Pan, whisk all ingredients for the marinade, except the pork. Add in pork. Turn to coat then cover and refrigerate at least 30 minutes (overnight is best), turning once halfway through.
2. Remove the meat from the marinade. SAVE THE MARINADE! Lay pork on a wirerack and pat dry. Season with @goldensteer Sergio's Seasonng and Pepper Mafia.
3. Set up your @webergrills kettle. Place @thegoodcharcoal into a chimney and light. Allow to turn grey the split your coals. Dump half on one side and half on the other to create an indirect zone in the middle. Place the lid on and allow to heat up to 350. Monitor your temps using a Chefs Temp Pro Temp S1 digital gauge for precise temperature control!
4. Place the pork directly in the middle. Insert your probe then cover. Flip halfway through.
5. When the pork hits 140, pull with @bbqaidtools tongs and loosely tent with foil.
6. While the meat rests, make the gravy. Pour the reserved marinade into a sauce pot on the stove then add water and flour. Whisk well. Bring to a boil then drop to a simmer for 20 minutes, stirring frequently.
7. Slice pork on a @bandito_boards using a sharp @kumaknives then assemble with mashed potatoes on bottom followed by pork, gravy, parsley.

Steak Crostini

I had to get in one last cook for #Traeger250 . If you ever ask me what I want to eat, the answer will always be steak. This is one of my favorite appetizers not only because the steak is the star, but it's downright delicious and it presents itself so well. Make sure you save the full recipe below!

Ingredients:
• 1 Ribeye
• Traeger Anything Rub
• 2 Tbsp. Butter
• 1 French Baguette
• 1/4 Cup Garlic Olive Oil
• 1 Tub Alouette Garlic And Herb Soft Spreadable Cheese
• Balsamic Glaze
• Fresh Chives, Chopped

Directions:
1. Season steak with Anything Rub then let rest on the counter uncovered for 45 minutes.
2. Preheat the @traegergrills to 350 for 15 minutes with the lid closed. Place the steak in the middle then allow to cook undisturbed until it hits 130 internal. Remove from the heat with @bbqaidtools tongs and put on a plate. Top with butter then place in a @chefstemp final rest blanket.
3. While the meat rests, slice up the baguette on a @deissofficial flexible cutting board with a @kumaknives bread knife. Spread on a baking sheet lined with parchment then brush the tops with garlic olive oil. Place on the smoker for 10 minutes until they just start to crisp.
4. While the baguette crisps, slice the steak into thin strips, against the grain then place back in the blanket to keep warm.
5. When the baguette is done, pull it and start to build immediately. Spread a thick layer of @alouettecheese cheese on the bottom then top it with a slice of steak. Drizzle with balsamic glaze and sprinkle with chives. Serve while still warm!
