Awards Dinner 2020! What a year!!! Had amazing record breaking year despite all the craziness in the world. Couldn’t have been this successful if it weren’t for this amazing team of people!

Let’s talk about food!! Some friends and I were talking about #healthybreakfast ideas and my girl @bdizzle came up with this delicious number. This is a “copy cat” of Cubby’s Breakfast Burrito! It’s loaded with protein, healthy carbs, veggies, and flavor! The first photo is her creation, the second one is mine🤪... her’s is way better!

As far as what you use for the wrap, my all time favorite are the Xtreme Wellness Low Carb tortillas. (Pictured in slide 3&4) I’ve been enjoying this for over 4 years! I always keep extras in my freezer. I have found them at Smith’s, Walmart, Peterson’s, and Maceys.

🔸Recipe/Ingredients

Cubby’s Egg White Burrito

Shallot
Spinach
Cherry tomatoes
Feta cheese
Egg whites
Quinoa
Jalapeño avocado dressing
Tortillas of choice
Avocado
(Take away or add any other veggies. I used red pepper in mine instead of tomato’s)

1. Cook quinoa according to package directions
2. Sauté the shallots in a little olive oil and salt for about 4 minutes or so.
3. Scramble egg whites in coconut oil. Add spinach before completely cooked so it can wilt.
4. Warm tortilla and add shallots, quinoa, egg whites with spinach, avocado, feta, cut cherry tomatoes, then drizzle of jalapeño avocado dressing.
(Make your own desired portions of each)

🍃Creamy Avocado and Cilantro Salad Dressing🍃:
-3/4 cup warm water
- 1 medium sized ripe avocado
- half a bunch of cilantro
- juice of 1 lime (or half a lemon)
- 3/4 tsp sea salt - 1/2 tsp cracked pepper
- 1 tsp cumin
- 2 tsps Vita Fiber Syrup or honey or stevia
- 1 jalapeño seeded

Combine all ingredients in a blender.... I also seasoned mine with some @feastmodeflavors Tequila Lime!Enjoy!

Today I’m grateful for FITNESS and the FRIENDS I’ve made through fitness. Sharing that passion, and common frame of mind gives you a connection like none other. You help, listen, share, and push each other. I’m grateful for all these amazing women pictured, and so many others who come to my classes or those familiar faces I see at the gym, or on the trails. I can’t possibly fit all in just 10 pictures!I My health mentally, physically, and emotionally would be nothing without al of you! My quality of life is that much better.... because when you find something amazing, it’s not worth anything unless you share it with others! Thank you to all!
