Ammassat • Also known as Capelin or Lodde fisk. • The traditional way to eat them in Greenland is whole and dried. They don`t salt it or clean it further - in fact they go straight from the boats by the hundreds and onto the nearby stones to dry out under the mild summer sun, this complets the cooking process and the locals have food over the harsh winters. • The season is very short, we were able to spot them around 3 weeks in the beginning of July. Our local fisherman Samuel took a handfull of us chefs out on his boat, went a couple of kilometer up along the coast from the restaurant and turned off the engine. After he poured a cup of milk into the sea. • Shortly after, we could barely see the clear seabed just a few meters below us - everything a few meters wide became pitch black and alive, thousands and thousands of female fish rushed over to mistake the white milk product for male semen. - with less than a liter of petrol used, a cup of day-old milk and a few fishing nets we had a new dish on our Greenlandic menu. • In the kitchen we butterflied fillet the fish so the spinal cord is removed, we also trim of the dorsal, anal, ventral and pelvic fins so the guest can eat every part of the fish where the herbs grows out. • The Ammassat in its raw stage has a natural yet very distinct floral scent of cucumber. We build around this by salting it briefly and pickle it in cucumber juice and elderflower vinegar before service. • When plating the ammassat is filled up with a emulsion made from slow caramelised lettuce. Pickled ramson capers, crispy buckwheat and local grown herbs that the section finds less than a kilometer around the restaurant. • At the table we serve it with a spoonfull of grilled cucumber juice seasoned with flamed Sake. • @koks_restaurant • #TheRemoteTestKitchen • Foto : @beinta

Local food and flavors are some of the greatest reasons to travel. And though the bistros of Paris and Tokyo’s izakayas always compel us to return, some of the most exciting foodie scenes are emerging in less-expected locations (like @koks_restaurant pictured here). From a nascent wine country in Brazil to the next great neighborhood for reimagined traditional plates in Bangkok, tap the link in bio for the global food destinations you need to know about now. 📷: @beinta; @claesbechpoulsen
