We went for Hake as a meatless GF dinner option.
Very quick using ready to go ingredients with a little twist

4 Hake Fillets
Lemon Juice
Mixed Herbs
Garlic
Mushrooms
Spring Onions
Frozen Peas
Salt & Pepper
Cherry Tomatoes
Belmorso Balsamico
1 pack Microwave Rice

I fried the mushrooms in a little olive oil with the spring onions then added frozen peas and cooked till soft. Use whatever herbs you like and season. Open pack of rice and pour in. Mix till well combined and then top with a good drizzle of the balsamic to make everything rich and caramel like. Place little bunches of the tomatoes on top to steam gently so they don’t break up.
While that’s simmering, add 2 tbsp water and lemon juice to a microwaveable dish. Place the hake on top and season with the garlic, salt and herbs. Cover and microwave for 4.30 minutes (900W) check if it’s to your liking but be careful to only cook further at 10 second bursts so you don’t dry out the fish.
Spoon the rice on a plate and top with the hake then finish with a little bunch of soft tomatoes 🍅

My little evening ritual. Hot cacao stays the same, whatever I find to have alongside it rarely does.

One thing’s for sure: @nibbed_cacao cacao = a better night’s sleep. Full stop!

Not an ad (I wish), just a public service announcement.

1. Hazelnut and coffee croissant tart
2. Pistachio strawberry sourdough soldiers
3. Gocciole will never let you down
4. Honey butter toast
5. Butter biscuit with salted peanut butter
6. Teeny tiny bit of toast with a not so tiny amount of butter
7. Can’t go wrong with a bit of peanut butter and jam
8. The last Tuscan cantuccino (😢)
9. Brandy butter, pistachio spread and smoked sea salt
10. Pear and almond cake and some macerated berries
11. Just a big a** chocolate cookie

When you want something that’s tasty but quick and still good for you, this Balsamic Chicken dish is the one.
We had it with a wild rice, quinoa, avocado, peach and tortilla side.

2 large chicken breast
Italian Seasoning
Salt
Olive Oil

Marinade:
1/3 cup Balsamic
2 tbsp Maple Syrup
1 tbsp Basil Pesto
1 tsp Garlic Puree
1/2 tsp Salt

Rice:
1 pack Microwave Rice (your choice)
1 Peach
1/2 Avocado
3 tbsp Corn
Chilli & Lime Tortillas (Hello Blanco Nino)

Cut the chicken into even sized pieces. Rub in the Italian Seasoning and Salt on both sides and spray with a little olive oil.

Add the marinade ingredients together and set aside.
In a large frying pan, add 1 tbsp olive oil and sear the chicken for around 4 mins on one side before turning over and cooking for another 3 mins. Lower the heat and pour in the marinade over the chicken. After 2 mins, turn over so the chicken is completely covered in the marinade. Cook for about 6-8 mins until it thickens up.
Make a dressing from the same ingredients as the marinade and sub the garlic for lemon juice. Mix well and pour over the rice dish.
Around 20 mins for a really tasty dinner (it’s Gluten Free)
