Eating your way through Grand Forks, ND and East Grand Forks, MN was no easy feat, but someone had to do it! (ad)

On our foodie weekend in this charming town about an hour from Fargo, we packed in the local flavor from handmade chocolate to the best filet I’ve had in a long time. And the fried cheese and pickles are a match made in heaven.

dunno what we’re calling this but it’s inspired by the grain bowl i had at the mn state fair last week!

180g (1 c) wild rice, rinsed well
1 (14 oz) can chickpeas, drained and rinsed
1 yellow onion, chopped
2 cloves garlic, chopped
1 (10-12 oz) bag frozen butternut squash
1/2 tsp smoked paprika
1/2 tsp dried thyme
1 tsp kosher salt, plus more to taste
lots of black pepper
480g (2 c) bone broth*
85g (3 oz) spinach

in a covered casserole dish, combine everything except for the spinach. top with spinach and another pinch of salt. cover and bake at 375ºf for an hour. uncover, give it a stir, and bake until the liquid is pretty much all absorbed and rice is cooked, begin checking after another 20 minutes. (if rice isn’t yet tender, add another good splash of broth and cook for 10 more mins.)

let sit for a few minutes and then here is how i like to serve it: scooped over a bed of arugula with a lemon wedge, some pickled onions and beets, a drizzle of ranch (or goat cheese + honey mustard vin!), some sunflower seeds, and whatever protein is in my fridge like leftover meatballs or hard boiled eggs.

*to speed up the baking time, bring your bone broth to a simmer before adding to the dish. bake for 1 hour total, removing the lid and stirring after 45 minutes.
