What an exceptional evening last night with SPYCA x Esmay at @esmay_adl!

We were delighted to host our guests for a one-night-only experience led by Executive Chef and @sanpellegrino_youngchef Pacific Region Juror, @alannasapwell and 2018 SPYCA Pacific Regional Finalist, now Head Chef at @bez.melbourne, @zackaryleon.

The S.Pellegrino Young Chef Dinner is a celebration of emerging culinary talent and mentorship. The evening showcased the next generation of chefs working within the Esmay kitchen, providing each chef with the opportunity to contribute their own dish while remaining part of a cohesive dining experience. Guided by Alanna Sapwell and guest mentor Zackary Furst, the dinner created an environment where creativity, learning and collaboration are placed at the forefront.

Stay tuned for more…

Chef @zackaryleon is bringing @bez.melbourne to @florian.eatery. Bez is the former Bar Liberty chef's new contemporary Australian/Polish cuisine project, blending Polish flavours and techniques with the exceptional produce of Australia.

Bez brings the spirit of the Mloda Polska arts movement to the Australian/Polish food and dining scene of Melbourne, highlighting the things that make Polish cuisine so unique and bridging it with local produce. Think Polish potato dumplings stuffed with Victorian smoked eel, twaróg cheese made in-house using fine local dairy, and sweet pierogi filled with seasonal berries.

Get ready for a fresh look at a rich, historic cuisine. Purchase your tickets now via the link in our bio.

Congratulations to @finebagels for her new book on Polish Baking, stoked to be included as Polish Baking abroad and share a bit of my family migration story also. Funny what a chance meeting at @bar.rascal and conversations about pasta themed desserts and gingerbread cookies can bring. Dad is stoked with his copy!

A Polish-inspired take on our house Martini for a short time only as @bez.melbourne takes over the kitchen. Darling Vodka, Hickson Dry gin, salted Kohlrabi, Vermouth, Tarragon. Salty, Herbal, Savoury, and way too delicious.
