Trying something new with my family! 🥟❤️

We tried the bibigo Mini Pop Mandu dumplings in Chicken and Beef Bulgogi. Their mini size makes them fun to serve and perfect for sharing at home.

Got leftover rice? My brain automatically says FRIED RICE🤪

Especially when I need a quick, easy lunch for the kids — this is my kind of “what do I have at home?” meal.

I started with leftover shallot + bacon, cooked with a dash of @moniniaustralia EVOO, then added prawns, cooked rice and @sunnyqueenfarms happy eggs. I wanted to keep it nice and golden, so just a dash of soy sauce, a sprinkle of @yumyum.au , spring onion for green colour and @bibigo.anz sesame oil for that nutty finish.

No lap cheong aka. Chinese sausage? No problem! I used @beechenghiangsg Golden Coin bought from @costco_aus instead — and honestly, it worked a treat.

All cooked in my favourite @equipcookware KIN Wok — one wok, quick dinner and lunch, happy tummies.

And this is exactly why I love leftovers: turning what’s already in the fridge into a proper meal instead of letting it go to waste.

When you realise there’s @walkers_tuna in the pantry… and then you look around and realise you basically have everything to make kimbap. 😂

My brain immediately went: TUNA KIMBAP ROLL.

This is exactly my kind of “what do I have at home?” meal — no shopping required, just a little pantry creativity. And the @walkers_tuna + @umeifoods Yuzu Mayo + tobiko combo? That little citrusy kick with the tobiko pop takes it to another level.

🥢 TUNA KIMBAP

Ingredients

* 2 cups cooked @nicericebyriverina Sushi Rice, slightly warm
* 1 tbsp @bibigo.anz Sesame Oil
* Pinch of @olssonssalt
* Sprinkle of toasted Sesame Seeds

Tuna filling
* 1 jar or more @walkers_tuna, drained
* @umeifoods Yuzu Mayo
* Tobiko, optional

Fillings

* 1 medium carrot, julienned and lightly sautéed
* 5 eggs, cooked into 3 small rounded omelette rolls
* Perilla Leaves

For rolling & finishing

* 6 sheets @bibigo.anz Roasted Seaweed (gim)
* Gimbap Roller from @s_martsydney
* @bibigo.anz Sesame Oil, for brushing
* Sesame Seeds, for garnish

Method

1. Prep the fillings
Lightly sauté the carrot until just tender.
Mix Tuna and Yuzu Mayo, then fold through tobiko.
Beat eggs and cook into 3 small rounded omelette rolls.

Season warm sushi rice with sesame oil, a pinch of salt and toasted sesame seeds.

2. Assemble
Place a full sheet roasted seaweed on the Gimbap Roller. Spread rice evenly over the seaweed, leaving about 1 inch at the top.
Add another seaweed sheet for an extra layer, then layer with perilla leaves, tuna mayo with tobiko, carrot, omelette.
Roll tightly using the gimbap roller and seal the edge with a bit of rice.

3. Finish
Lightly brush with sesame oil and sprinkle with sesame seed.

These are soooo delicious. My whole entire family enjoyed eating them, and even my fussy toddlers were asking for more!
So easy to cook, with 3 different methods available. They stayed hot the entire meal which I paired with some fried rice. Absolute chefs kiss to these, we will be having these often

SUSHI X JAFFLE 🤯

Ok sis I think I’ve done something here….. claiming the trademark perhaps?!!! This idea came to me over the weekend and as far as my research goes this hasn’t been done before…. Let me know if it has 🤞🤞

Crispy sticky rice stuffed with avo and edamame (or any filling you choose!!!) in the classic jaffle triangles, drizzled with teriyaki glaze, homegrown spring onion and @mingleseasoning rice topper seasoning aka. Furikake!!

When your IG algorithm keeps showing you the same food over and over again… you take the hint.
So yes, I had to make it. Must. Try. It.

This Soba Nori Prawn is inspired by @shellylim_21 — a delicious combination of buckwheat noodles, umami-packed nori, sesame, Parmesan and juicy prawns. And because I can never resist adding a little heat, I finished mine with @maesriaustralia crispy chilli oil.

I cooked the soba in my @equipcookware KIN Wok — boiled the soba in the wok, then used the steamer insert to strain the noodles. One wok, less washing up… exactly how I like it! 🙌🏼

Soba Nori Prawn 🍤

For the noodles
* 300g dried buckwheat noodles / soba
* 5 packets seasoned seaweed sheets
* 2 tbsp roasted white sesame seeds
* 2 egg yolks
* 2 tbsp @bibigo.anz sesame oil
* 3 tbsp soy sauce
* ⅓ cup finely grated Parmesan
* A few tablespoons soy flavoured reserved noodle cooking water.

For the prawns
* @moniniaustralia EVOO
* 300g raw prawns, peeled and roughly chopped
* Salt, to taste

Finishing
* 1½–2 tbsp crispy chilli oil, optional
* Tobiko, to finish

Method

Cook the soba
Bring water to a boil in the KIN Wok and add a splash of soy sauce. Cook the soba according to the packet instructions until just tender. Reserve some cooking water.
Use the KIN Wok steamer insert to strain the noodles — so handy!

Make the nori parmesan sauce
Blitz the seasoned seaweed and sesame seeds until finely crushed. Transfer to a large bowl and mix with egg yolks, sesame oil, soy sauce and Parmesan.

Bring it together
Add the warm soba and toss well. Gradually add a little reserved noodle water until glossy and beautifully coated.

Cook the prawns
Add the chopped prawns to the pan and cook for 2–3 minutes, tossing until just cooked. Season with salt.

Serve
Divide the soba between plates, top with the prawns and drizzle with crispy chilli oil. Finish with tobiko for that gorgeous colour and little pops of flavour.

And now I know why it’s so easy to fall in love with this dish and definitely worth trying.
