HONEY CHIPOTLE CHICKEN RECIPE 🌶️🍯
Original recipe by @bisongainz

Hot Honey Chipotle Chicken
2 lb boneless skinless chicken thighs
1 can chipotle peppers in adobo sauce
2 tsp cumin
2 tsp smoked paprika
1 tsp salt
1 tsp garlic powder
½ tsp black pepper
2 tbsp lime juice
3 tbsp honey

Instructions

1. Marinate the chicken in the chipotle adobo sauce, cumin, smoked paprika, garlic powder, black pepper, salt, and lime juice (lime juice not shown in video).
2. Oven bake chicken at 390°F for 30 minutes, then broil for 5 minutes.
3. While the chicken cooks, mix the honey into the remaining chipotle adobo sauce to make the hot honey chipotle sauce.
4. After the chicken cooks, slice and toss or drizzle with the hot honey chipotle sauce.

I served mine over cilantro lime rice with pickled red onions, romaine lettuce, a simple fajita veggie mix, and a quick chipotle sauce made with @kitehillfoods sour cream, hot sauce, and lime juice.

I still can't believe this place is in the Bay Area... 😳

@bisongainz and I went on a sunset hike at Mt. Tam thinking it'd be a casual evening walk.

We were wrong.

The sky exploded, the views were unreal, and I captured shots that honestly don't look real.

Watch until the end for the money shot 🌅👇

🌯 Homemade Chipotle Chicken Bowl 🌶️

Ingredients:
• 1 cup jasmine rice
• 1 tbsp neutral oil
• 1/3 cup fresh cilantro, chopped
• 1 lime, juiced
• Chicken thighs (or breasts if that's all you have like me 😭)
• Chipotle peppers in adobo sauce
• Cumin
• Salt
• Black beans (optional)
• Pico de gallo (optional)

Directions:

1. Marinate the chicken with chipotle peppers in adobo sauce. Cover and refrigerate overnight, or for at least 1–2 hours before cooking.
2. Cook 1 cup jasmine rice with 2 cups water and a drizzle of oil. Bring to a boil, reduce heat to low, cover, and cook until the water is absorbed and the rice is tender.
3. Mix the cooked rice with:
1/3 cup chopped cilantro
Juice of 1 lime
1/2 tsp salt
4. Heat 1 tbsp oil in a cast iron skillet or pan over high heat.
5. Season the chicken with salt and cumin, then sear for about 2 minutes per side (or until your preferred doneness).
6. Slice the chicken and build your bowl with:
Cilantro lime rice
Black beans
Steak
Pico de gallo

So delicious 😋 🌯
