Lemons, garlic and olive oil are the backbone of Cristina Topham’s cooking at Spread Kitchen in Sonoma. The chef-owner goes through roughly 680 lemons a week at her Lebanese-inspired restaurant in Boyes Hot Springs, squeezing citrus into everything from hummus and salads to marinades and sauces.

And somehow, she still finds herself saying the same thing.

“It needs more lemon.”
