🥘⭐️ Slow Cooked Beef Rendang ⭐️🥘

Chef Adrian this looks delicious, using our ‘Eye of the Round’ on offer this week, this dish would make a perfect weekend feast!

Ingredients
1kg eye of the round
2 shallots
2 cloves of garlic
2 tsp red curry paste
SuperValu rapeseed oil
Sea salt & cracked black pepper
1 tin of coconut milk
1 beef stock pot
4 keifer lime leaves
5 cardomon pods
2tsp tamarind paste
1 cinnamon stick
Rice of choice (I used SuperValu long grain)
Chopped chilis and fresh mint chopped to sprinkle on top

Method
Preheat the oven to 150C.
Start by seasoning the beef and sealing it on a frying pan all over to get a nice colour.

Roughly peel and chop the shallot and garlic and place into a casserole dish. Add the beef on top and baste it with the red food colouring.

Next add the coconut milk, spices and tamarind paste followed by the stock pot and 500ml of water.

Cover with tin foil and place into the oven to bake for 4 hours.

This should just fall apart with tongs and I help it along by shredding with two forks. Mix it all up in the sauce and serve on top of rice with the chopped chilis and mint.

Enjoy ❤️
