A glimpse of #Dimasa cuisine .
With due respect ,im showcasing few dishes I prepared for @rongaligoodvibes Ethnic food exhibition . Dimasa cuisine is extensive and has an identity of its own .
Dimasa cuisine .
The word Dimasa means "Son of the big river" (Dima-river, sa-sons), the river being the mighty Brahmaputra.
The Dimasa people are an ethnolinguistic community presently inhabiting Assam and Nagaland states in Northeastern India. Dimasas do jhum cultivation .
Busu Dimasa is their major festival .
Their cuisine is very unique ,so also the cooking methods . "khari "dish refers to any stew cooked with seasonal vegetables ,alkaline extract and naplam ( fermented fish ).Smoked meat or fish is added to enhance flavour . "mudru " is boiled stew with vegetables ,herbs etc . Various chutneys are prepared and in most of them Naphlam is added .
Judima is the traditional rice wine brews by Dimasas  which has a beautiful flavour .

1) Maiju ( Glutinious rice )

2 ) Daono Hon ( Country chicken cooked with riceflour . Hon means rice )

3) Mudru ( A stew cooked with taro tubers ,cherry tomatoes , tora gaaz , Meshagi leaves )

4) Khari or an alkaline dish cooked with ash gourd n traditionally smoked pork , mustard greens and Naphlam
