✨Girl dinner ✨…. I reserved this mezze platter for when my husband was out of town because he isn’t a fan, but it was his loss! Dolmas from @thejoyofcooking , using the vegetarian recipe substitution they suggest by swapping extra rice, pine nuts and currants for the meat (fabulous) with hummus from the @blossom.nyc cookbook, sourdough pita from @vanillaandbean , lemony roasted potatoes from Veganomicon by @isachandra and a simple little greek salad. #vegan #vegancooking

Roasted vegetable sandwich from the @blossom.nyc cookbook, with roasted zucchini and red pepper, sautéed spinach, and a creamy eggplant spread, served on sourdough focaccia from @alexandracooks. 🌶️🍆 One thing I’ve noticed when cooking from books developed by restaurant chefs with recipes they served in their restaurants is that the ratios are often so off 😬. You’ll end up with 5x more sauce than you need to serve with the rest of the components, or it’ll call for an outrageous quantity of salt and water (oddly enough). In this recipe, I knew roasting an entire eggplant would be far too much to turn into a spread for just three sandwiches, and I reduced it. With more and more experience, I’m able to spot these issues and reduce as needed to enjoy the food as I believe it was actually intended! Similar to spotting continuity errors in a movie, it becomes satisfying to anticipate recipe testing errors in cookbooks and correct them before they ruin a dish. #vegan #vegancooking #blossom #sourdough

Tofu BLT from the @blossom.nyc cookbook on sourdough multigrain from @vanillaandbean. This was a unique take on a BLT with fried tofu in addition to tofu bacon, but the chipotle mayo was the best part. 👌 🍅 🥓 🥬 #vegan #vegancooking #veganbaking #sourdough
