It was well after 1 a.m. and roughly 100 scantily clad clubgoers snaked down the block outside of Legacy, the LGBTQ+ nightclub in Boston’s Theater District. With about 400 people downstairs, the club had long hit its capacity, but no one seemed eager to give up their place in line.

Down Warrenton Street, more crowds spilled onto the sidewalks outside Icon and Venu. IDs were already pulled out. Vape clouds wafted overhead. Groups in stilettos and tight dresses passed around cigarettes before disappearing back onto sweat-soaked dance floors, while others summoned Ubers to chase one more stop before closing time.

Normally, Boston nightlife would already be winding down. By 2 a.m., last call is over and the lights come up inside these beat-thumping establishments. But not this summer.

Massachusetts temporarily pushed closing times to as late as 3 a.m., if municipalities opted in, through the end of July for World Cup, America 250, and Sail Boston celebrations, allowing nearly 200 bars and restaurants to stay open later. The experiment has boosted sales, filled seats and dance floors, and begun to chip away at Boston’s reputation as a city that shuts down too early. Now, it’s prompting a debate, with some city leaders proposing that the later last call should outlive the summer.

Ten years ago, our team loaded up an RV and drove nearly 6,000 miles around the country to meet the people behind the ingredients in our kitchens. We called it Himmel Hits the Road. I’ve been thinking a lot lately about one stop in particular: Brawley, California, home of Brandt Cattle Co. Bill and Sue Brandt opened their home to our team and fed us like family. Their son (and my good friend) Eric walked us through every corner of the ranch with the kind of pride and knowledge that only comes from a lifetime of doing it right.

That visit reminded us that the best partnerships aren’t just about product. They’re about people. Today, we’ve now been working with Brandt for twenty-five years, and we’re still proud to call them our partners. One ranch, one family, no hormones, no antibiotics, no shortcuts. Their beef is a staple on our menus across the group, and especially at @grill23andbar and @thebanksboston.

This time of year, I find myself slowing down and thinking about where our food actually comes from: the ranchers, the farmers, the fishermen who make what we do possible. We’re not renting another RV just yet, but we are coming back to our roots. This year, we want to bring these stories to our guests and remind everyone that behind every great dish is a relationship built over the years. Stay tuned, there’s much more to come.

We’re kicking things off on April 24th with a five-course Surf & Turf dinner at @thebanksboston, celebrating Brandt Beef alongside @islandcreekoysters. I hope to see you there.

I am proud to announce that I have assumed the role of Beverage Director at Grill 23 & Bar. I sit on the shoulders of giants and I thank my beverage directors that precede me for building the world class program that it is today. I thank @hugobensimon for being open ears to all my complaining over the years and kicking my ass when I need a good ass whooping. I thank my team @tori.t.somm @sugarsweetstotler @erikcancelmo @samwpatton for bringing the best out of me and being the best teammates that a man can ask for. I thank @brealsomm for always being the voice of reason and guiding me on the right path. I thank @mj.___________________________ for being my better half and supporting me through the years. I thank all my friends and colleagues who have shaped me through the years into a better and better version of myself. I promise to be a good steward to the program at Grill 23 and lead my team into a bright future!

Last week, I had the incredible privilege of attending the Advanced Sommelier Course in Dallas, hosted by the Court of Master Sommeliers, Americas.

The CMS-A is where uncompromising standards meet the heart of hospitality, uniting precision, passion, and the world of wine and spirits in one unforgettable experience.

This year’s course brought together 200 Certified Sommeliers from across the Americas, selected through an exceptionally competitive and rigorous application process. With thousands of applicants vying for a seat, each spot represents a sommelier who has demonstrated not only technical excellence, but the drive, discipline, and potential to rise to the very top of the profession.

Attending the course now makes us eligible to sit for the Advanced Sommelier Exam next year—a major step on the journey toward becoming a Master Sommelier.

Over three full days, we immersed ourselves in blind tasting, theory, and the fine details of world-class service, all under the guidance of Master Sommeliers whose knowledge and generosity were both humbling and energizing.

But what truly set this experience apart was the sense of belonging it created. This is where you find your people—the ones who speak your language, who understand the long hours, the study sessions, the passion behind every pour.

We left not only with sharpened skills, but with a stronger sense of purpose and a circle of lifelong friends and colleagues who will challenge us, support us, and walk with us on the road ahead.
