Roasted Cauliflower, Baked Cannelloni Ball’s & a Sweet & Savory Tahini Sauce!

BAKED CAULIFLOWER :

INGREDIENTS:

Whole head of cauliflower
⅓ cup vegan butter softened + 3 melted Tbs (set aside)
2-3 garlic cloves minced
1Tbs of Garlic Powder
1 Tsp of Sea Salt or Himalayan Salt
¼ Tsp of Paprika
Pinch of Sugar or 1-Tbs of maple syrup

INSTRUCTIONS:

Preheat the oven to 400°F.
Using a sharp knife, trim off the bottom of the cauliflower stem. Set the cauliflower head inside an oven-safe skillet or baking pan with sides at least two inches high.
In a small bowl, stir the softened butter, minced garlic, salt, & paprika. Rub the seasoned butter over the top & sides of the cauliflower head. Cover the cauliflower loosely with foil & bake for 40-50 minutes, or until tender in the center.
Remove the cauliflower from the oven & reduce the oven temperature to 375°F. Uncover the cauliflower & baste it with the melted butter either from the baking pan or skillet or from extra melted butter that was set aside. Return the cauliflower to the oven, uncovered, & roast until golden brown, about 15 minutes longer, basting with the melted butter every five minutes & serve.
