Today I took 28 lucky sophomore Culinary 2 students to the commissary of @portosbakery
Immediately, we were warmly greeted by Pilar and Larissa who hooked us up with our fashionable and safety fits; complete with face masks, hair nets, and smocks.
We were then given a wonderful tour of the commissary by Dora, where my students witnessed the making of the famous potato balls, the guava cheese rolls, the spinach empanadas, and the tres leches cakes. They were able to see the on-site mechanic shop, and the gentleman who sits on the ready to fix anything at any of the locations & kitchens at any moment.
They watched on as a Porto’s team member weighed out various ingredients as she mise en placed for a LARGE batch of something delicious in the Spice Room.
This was followed up with a brief documentary of the history of Porto’s, which included many interviews of the team members who have worked there over the years. Pilar and Larissa then talked to them about the culture of Porto’s and dropped some Porto’s knowledge and fun facts on them, and played a little trivia game with them where some earned some Porto’s swag!
After this incredible experience, we got back on the bus and headed to the Porto’s Restaurant in Downey where we were once again, greeted warmly, as one is at Porto’s, and treated to a delicious lunch of croissant sandwiches & cheese rolls. The students then took yet another tour of the back of the restaurant where team members were busy decorating cakes and baking potato balls and pastries!
I truly love this annual trip- the hospitality at Porto’s is like no other, and the food is incredible! My favorite part is seeing all the kids come off the bus with that iconic yellow bag!
Special shout out to @menwia for being my second chaperone, and it’s always a great day when I see my @ccaplosangeles ladies @ely.lopera and @kiddingaroundthekitchen ❤️

They did it!! Today 37 seniors competed at the @ccaplosangeles Final Competition held at @lamissioncollege and 3 strong young ladies represented @browningbison proudly. These students worked hard staying late after school, practicing the recipes, and perfecting the techniques; and come April 28th, they will know how delicious hard work tastes when they receive a @culinarycareersprogram scholarship!

In addition to this fantastic news, I am so proud to say that not only did we have 2 Juniors at todays competition, running plates and ingredients, because they were among the top 10Juniors at the Preliminary Competition, but also extremely excited to announce that one of them, Ah’Jon, was in fact one of the top 3 and has earned a one-week Culinary Bootcamp at a college in NY this Summer! Woohooo🥳. So proud of all my baby bison chefs in training!
