We need to talk about Southeast Asian food…

There’s something about the way food is cooked here that keeps fucking with everything I thought I knew.

The cooking can look simple. Fire. Smoke. Rice. A piece of meat. A handful of herbs. A sauce that probably took someone five minutes to put together. But then you eat it and realize how much thought, history and instinct is hiding behind that simplicity.

Nothing feels unnecessarily complicated. Ingredients are pushed just far enough. Acid where it needs to be. Sweetness without becoming sweet. Heat that actually has a purpose. Smoke, salt, fermentation, herbs. Everything doing its job without needing twenty components on the plate to explain itself.

I’ve eaten chicken all over the world.

Cheap chicken skewers on the street in Brazil before a football match. Roast chickens, family recipes, charcoal grills. And chicken dishes in fine dining kitchens that take two or three days to prepare, brine, dry, confit, glaze, sauce and plate.

Then I came to the Philippines and ate mang inasal!!!

And fuck me, it just hits different.

Chicken, marinade, charcoal, smoke, calamansi, vinegar, rice. No theatre. No tweezers. Nothing trying too hard.

Just really fucking good food.

And then there are the people. The kind of hospitality where food is never just food, it’s an invitation, a conversation, a way of looking after someone. People want you to eat, to try something, to understand where it came from. That generosity stays with you just as much as the flavours do.
Travel has probably taught me more about cooking than any kitchen ever could. Every country reminds you that there are a thousand different ways to arrive at something delicious, and that sometimes becoming a better cook means forgetting what you think food is supposed to be and paying attention to what people have been doing for generations.

I’m beyond grateful that cooking has given me an excuse to travel, eat, learn, steal a few techniques, question a few of my own, and keep growing.

Southeast Asia, I’m listening.

Southeast Asia, you have my heart. #southeastasia #philippines #indonesia #food

2 Years and 6 Months ago @alexcordova asked me to come help open Desa Kitsune in Canggu with him… and then I flew back to America.
2 Years and 4 Months ago he and @ronaldwidjadi asked me to move to Bali to be a part of Savaya Group with a focus on opening a new club in Kuta.
I talked with @nikobratsis @dankrieg @stravy and then it was time to pack up and move again.

This past weekend was the official Grand Opening of @zumanabali

Thank you to @isabellanadia @savaya and all the partners for welcoming me into your country and allowing me to be a part of this opening. We will show everyone… Why Kuta!?!

This Bali trip felt different from all the others.

I met new friends, reunited with old ones, and, most importantly, created memories I’ll never forget.

Thank you to everyone who made this trip so special. Every laugh, every conversation, and every moment meant more than you know.

Bali, I’ll be back. Until then, be kind to one another. 🤍
