We’re off to Tassie! ✈️✈️

Last week, Luke and I had the pleasure of catching up with Trav from @capegrimbeef and Adam from @awmgroupau , who invited us to take part in the Cape Grim Butcher Experience.

This incredible paddock-to-plate journey will see us visiting their farms, touring their processing plant, learning about their practices, and discovering what makes Cape Grim produce some of the best beef in the world.

Of course, we’ll be bringing you all along for the ride 📸 From the farms to the finished product, we’ll be sharing the experience every step of the way.

We’re super excited. Bring on November! 🤩🥩

SAME IMMUNE HOUSE. JUST DOING THINGS A LITTLE DIFFERENTLY 🖤

Our Sunshine Beach doors might be closed, but there’s still plenty happening in the IMMUNE HOUSE kitchen.

While we’re busy building what’s next, we’re continuing to do what we love most. Cooking real, nourishing food, making life a little easier and keeping your fridges (and bellies) full.

So, here’s how you can still get your IMMUNE HOUSE fix.

WEEKLY MEAL PREP.
Your week just got a whole lot easier. Four single serve meals, a rotating fortnightly menu and plenty of extras to choose from. Order by Friday for delivery or collection the following Monday. We do the cooking, you do the eating.

PERSONALISED MEAL PREP.
For those wanting something a little more tailored. Your preferences, your routine, your household. From planning and shopping to cooking, packaging and delivery, we take care of the whole lot. Made entirely around you and whoever else you’re feeding.

TAKEAWAY CATERING.
Hosting something? Leave the cooking to us. Slow cooked meats, generous seasonal salads, house made dressings and condiments. Whether it’s a long lunch, a birthday, a corporate gathering or just an excuse to get everyone around the table, we’ve got the food covered.

THE MEALS YOU KNOW & LOVE.
Still here, still stocked, still ready to make dinner a whole lot easier. You’ll find our ready made meals at our wonderful local stockists across the Sunshine Coast.

This next chapter is about growing IMMUNE HOUSE beyond four walls, creating more ways to bring our food into your homes, around your tables and into your everyday lives.

And while there’s plenty happening behind the scenes, one thing hasn’t changed. Our love for good food, quality ingredients and doing things properly.

Different space. Same heart. And plenty more to come.

Swipe through for all the details.

Weekly meal prep and takeaway catering are available to order via our website. For personalised meal prep, slide into our DMs or email info@immunehouse.com.

Lemongrass & Coconut Slow-Braised Beef Cheeks
The perfect nourishing meal for a slow evening at home.

INGREDIENTS

* 1–1.2 kg beef cheeks, trimmed
* 1 tbsp coconut oil
* 2–3 tbsp Thai red curry paste (adjust to taste)
* 3 stalks lemongrass, bruised and chopped into large pieces
* 1 brown onion, finely diced
* 4 garlic cloves, minced
* 1 tbsp freshly grated ginger
* 800 ml coconut milk
* 250 ml beef stock
* 4–5 kaffir lime leaves
* 1 tbsp fish sauce, plus extra to taste
* 1 tsp coconut sugar (optional)
* Juice of 1 lime, to taste
* Fresh chilli, coriander and freshly grated coconut, to serve

METHOD

1. Preheat your oven to 160°C conventional (140°C fan-forced).
2. Pat the beef cheeks dry, season with salt and pepper, then sear whole in coconut oil in a heavy-based oven-safe pot until browned on both sides. Remove and set aside.
3. In the same pot, sauté the onion until softened. Add the garlic, ginger, lemongrass and Thai red curry paste. Cook for 1–2 minutes until fragrant.
4. Pour in the coconut milk and beef stock, scraping up any browned bits from the bottom. Stir through the lime leaves, fish sauce and coconut sugar.
5. Return the whole beef cheeks to the pot. The liquid should come partway up the meat. Cover with a lid and transfer to the oven for 3–4 hours, or until the beef is fork-tender.
6. Remove the beef cheeks and set aside. Simmer the sauce uncovered on the stovetop for 10–15 minutes if you’d like it thicker. Taste and adjust with extra fish sauce for depth, lime juice for freshness or curry paste for more flavour.
7. Serve the beef cheeks whole or pull apart into generous pieces. Spoon over the coconut curry sauce and finish with fresh coriander, chilli and grated coconut.

Serve with fluffy jasmine rice and a fresh, crunchy salad to balance the richness of the curry.

An independent report on Australian supermarket produce tested 78 samples of fruit and veg from major stores.

Close to half contained at least one PFAS pesticide residue
12 samples went over legal limits or contained chemicals banned in other regions, including the EU
Strawberries in one sample came in at nearly 10 times the legal limit

I think it’s fair to ask why this has gone on for so long, and what these “forever chemicals” mean for our health over time.

If you’d like to step away from the big supermarkets, here are some local favourites on the Sunshine Coast that I visit regularly for my produce:

🌱 @noosafarmersmarkets
🌱 @butchersofnoosa
🌱 @organikanoosa
🌱 @goodharvestorganicfarm

And if you’re local and would love an amazing garden or food forest, @thenooklandscaping brought ours to life. We’ve been enjoying the produce every day since. We know exactly what’s in our soil and that nothing is being sprayed, and we use companion planting to keep the unwanted bugs away.

What’s one thing you’d love to grow?

Could poor gut health be making your cravings stronger?

Your gut and brain are constantly communicating. When gut health is disrupted, it may affect
inflammation, mood, focus and the systems involved in cravings and impulse control.

That’s why gut health isn’t an optional extra at Noosa Confidential. It is built into the way we
treat each other.

Our in-house chef isn’t simply here to provide good food. Every meal is prepared according
to the full GAPS protocol, with an anti-inflammatory focus designed to support the gut and body throughout recovery.

This isn’t about losing weight, eating “clean” or following a perfect diet.

Food won’t do the work of recovery for you.
But it can change the conditions you’re trying to recover in.

Thai Beef Salad

This quick and easy Thai beef salad is perfect for the warmer months

Fresh, full of flavour and a family favourite, especially when it’s made with a delicious @butchersofnoosa porterhouse steak 🤌🏼

I served mine with noodles, but you could easily have it with rice or simply enjoy it with the salad on its own.

Fresh, nourishing and so easy to throw together for a weeknight dinner

If you’re over chicken and rice, give this a go

Nice and easy, and for how good it ends up, it doesn’t take that long to prep.

Ingredients:

* 1kg chuck steak
* 1 can crushed tomatoes
* 1 can tomato paste
* ½ bunch celery
* 3 carrots
* Bone broth
* Garlic
* 1 onion

Method:
First, dice your chuck steak into bite-sized pieces and sear it in a pan.

Next, chop up your celery, onion and carrots.

Chuck everything into the slow cooker along with the crushed tomatoes, tomato paste, garlic and enough bone broth to get everything nicely covered.

Cook on low for 7–10 hours, or until the meat is tender and pulling apart.

Easy, high-protein and bloody good 👌
