At the heart of the open kitchen is a striking, custom-made black cooking suite. This arrangement is designed for the efficiency required by Pietro's menu, which features local ingredients. In this environment, the equipment doesn’t just look incredible. it’s the engine that allows the team to turn fresh, mountain-inspired ingredients into a world-class experience.

A huge thank you to Chef Pietro for letting us inside this masterpiece of a kitchen.

This is where our olive oil begins.
Long before the harvest. Long before the bottle.

In the soil. In the Calabrian sun. In the quiet care given to every tree.

Here, the olives are grown following organic farming principles. Every tree is cared for patiently, gently, with love.

In my espresso cup, there is olive oil instead of coffee. A reason to go deeper into one of the Mediterranean’s most valuable products - its freshness, polyphenols, oleic acid, and why true quality begins here, in the grove.

And almost without noticing, you begin to live at its rhythm. Everything urgent becomes distant. What worried you no longer feels quite so important.

There is only the olive grove, fruit picked straight from the trees, long lunches and the endless sound of a Calabrian summer.

Simple days that quietly put everything back in its place.

Задолго до урожая. Задолго до бутылки.

В земле. В калабрийском солнце. В тихой заботе о каждом дереве.

Здесь оливы выращивают по принципам органического земледелия. О каждом дереве заботятся терпеливо, бережно, с любовью.

В моей чашке для эспрессо вместо кофе - оливковое масло. И повод глубже разобраться в одном из самых ценных продуктов Средиземноморья: в его свежести, полифенолах, олеиновой кислоте и в том, почему настоящее качество начинается ещё здесь, в роще.

И почти незаметно начинаешь жить в ритме этого места. Всё срочное отдаляется. А то, что тревожило, уже не кажется таким важным.

Остаются оливковая роща, фрукты прямо с деревьев, долгие обеды и непрерывный звук калабрийского лета.

Простые дни, которые тихо возвращают всё на свои места.

Nerikomi tableware pieces in red tones and white, designed by @astrasceramics / @astrasceramique.

Created for the culinary experience of the restaurant @caaa_lucerne CAAA, in dialogue with the cuisine and the atmosphere of the space, these unique porcelain pieces each carry their own rhythm and identity — impossible to reproduce in exactly the same way.

Each object becomes an extension of the culinary language, shaped between material, gesture, and emotion.
