It’s happening!

27 years in the making, BrightonFoodStory launched last night with a network of supper clubs across the city to celebrate local talent, the richness of our stories and the joy of eating together. Well done chefs @laurakarall and @amaryllistherminot for creating a dreamy menu that is the essence of the BFS vision @cafe_rust

We dined with @happy_gut_co at her Wandering Table of vegan Sephardic Friday night gorgeousness, while @gemma.ogston treated a packed house @thecanopybrighton and @chef.kanthi told his stories of two Indian states through food @the_spice_circuit

BrightonFoodStory presents: The Seasonal Table -Supper Club — From Seasonality to Community @cafe_rust
Friday 2nd October.

As part of The Radical Discussion Weekend, organised by BrightonFoodStory, @laurakarall and @amaryllistherminot come together for a special seasonal supper club in collaboration with @faresharesussexsurrey

This is more than a four-course dinner.
Laura has been creating seasonal supper clubs since 2022, and in 2024 began a series of fundraising supper clubs in support of FareShare Sussex.

Her cooking is rooted in the belief that following the seasons means following the natural rhythm of the land — cooking with what is available, celebrating ingredients at their best, and finding value in produce that is often overlooked.

Amaryllis has spent years volunteering across Brighton and, for the past two years, has been cooking every Monday as part of The Choir with No Name, a charity supporting people affected by homelessness and marginalisation through singing, food and community.

Now they reunite around a shared question:

What if we looked at food through the whole journey — from soil and season, to kitchen and table, to community?

How does eating seasonally change the way we value food?

What does “local food” really mean?

Can food be both a source of nourishment and a way of bringing people together?

And how can surplus become not simply something we need to redistribute, but an opportunity to rethink how our food system works and who it serves?

Through the evening, we’ll explore some of these questions alongside FareShare Sussex, connecting the food on our plates with the people, producers, communities and systems behind it.

Expect a relaxed evening around the table, good food, conversation and a four-course seasonal menu inspired by what Sussex has to offer at the beginning of autumn.

Meet Laura Karall, Head Chef at Café Rust, Hove, as part of our Women in Hospitality series 👩‍🍳

Laura's cooking draws on a genuinely global background, Hungarian roots layered with Italian technique, Japanese touches, and a strong minimal waste philosophy shaped by an internship at Silo, the world's first zero waste restaurant. In the kitchen, she works alongside chefs from Poland and Germany, and that mix of perspectives shapes the weekly specials into something unexpected and layered every time.

Sustainability runs right through her approach to food. Orange peels become citrus oils, cabbage hearts and squash trim become purees and stocks, and nothing goes to waste without a second thought. Laura recently completed a course in Sustainable Food Production and Processing with the University of Cambridge, and sees chefs as a bridge, helping guests understand why seasonal and responsibly farmed food matters.

Café Rust is also a proud example of women in hospitality leadership, with women in every site manager role and at the head of the kitchen across two of the company's locations.

Her advice for any woman feeling the weight of a culinary career is honest and grounded: honour your energy as much as your ambition, and protect the joy that drew you to cooking in the first place.

We catered a very special event over the weekend at the beautiful @cafe_rust 🤍 We worked with the hosts to create a bespoke menu of terre à terre canapés that went down a treat. Favourites from our menu, wasabi cashews, olives, lavash crackers and of course our famous focaccia!
