![[Special Guest Bartending]
Kazu,
Gin
Momoe

Hello, this is Café SAYLESS.
We are excited to welcome Kazu, Director of Stage Bar,
and Momoe, Head Bartender, from the vibrant bar
scene of Kuramae, Tokyo.
Stage Bar is run by Ethical Spirits, the iconic gin distillery representing the Kuramae area, and for this event, they will be showcasing cocktails crafted with their signature gins.
For this collaboration, we’ve prepared four signature cocktails—carefully crafted and selected by Kazu,
Momoe, and myself. Even as someone who doesn’t
usually drink gin, these are the cocktails I always go
back to whenever I visit Tokyo.
About a year ago, I took a spontaneous trip to Tokyo
and met them by chance—bartender and guest in a quiet
bar in Kuramae. Since then, that encounter has grown
into a friendship and now a creative partnership connecting our two spaces.
With my personal motto,
“I never serve what I wouldn’t drink myself,”
I can confidently recommend every cocktail on this menu.
A moment where Seoul and Tokyo connect in a single glass — we invite you to share it with us.
Thank you.
