Working at Si Paradiso was one of the most important chapters of my career. I had the opportunity to work alongside talented people, push myself every day, develop my skills and create memories that I’ll carry with me for life.

I’m truly grateful for everyone who was part of this journey and for everything I learned along the way.

CASA X TIPO!

Paul, Cale and Em from WA’s most talked about restaurant and wine bar @casa_perth are coming to Tipo for an afternoon of big Italo-Mexican flavours, fun tunes and minimal intervention wine.

Over three decades, WA @goodfoodau Chef of the Year 2024 Paul Bentley has worked in some of the world's best kitchens, including @restaurantdaniel in New York and a string of his own acclaimed restaurants and taquerias in Mexico. At Casa, his cooking is creative and generous, drawing on French technique, Mexican vibrancy and the incredible produce of Western Australia.

On July 5, Paul and Andreas Papadakis are putting on a six-course fiesta. Expect abalone-topped tostadas, birria paccheri, squid ink tonnarelli with uni butter, and babba au tequila. Plus wines spanning wild-fermented, skinsy and refined, and punchy cocktails including Casa's Mezcal Tommy's Margarita.

Tucked into Seminyak’s lively dining scene, FED is the kind of restaurant that feels confident without fuss and quietly ambitious. Run by a young local team, the kitchen blends classic technique with a sharp instinct for produce and flavour, creating food that feels both familiar and refreshingly new.

We caught up with the team to chat about their time cooking in Perth working with Paul Bentley, Cale Mason and the crew at Casa, and the remarkable produce that surprised them while they were here. They also reflect on how Bali’s unique ingredients shape their approach, what ambition looks like for a small independent restaurant and the Western Australian restaurants they are eager to visit next.

Decades in New York and Mexico inform co-owner and chef Paul Bentley’s direction. A deliberate looseness, expressed with confidence rather than showmanship, is evident as you move between small plates, pastas, grill work and larger dishes with coherence.

Expect the likes of pumpkin seed dip with pickled green tomato and focaccia or chicken liver parfait on toast with pineapple and habañero marmalade. Seafood is handled with care: tuna crudo, sharpened with green tomato aguachile, is direct and clean. Shift naturally into crab tonnarelli with zucchini and jalapeño butter – generous without excess. From the grill, black Angus flank with smoked guajillo butter and roasted Mottainai Lamb saddle with mole negro, both reflect Bentley’s assured hand with fire and spice.

Polished throughout, the experience is shaped by co-owner Cale Mason. A seasoned creative beyond hospitality, his influence is felt in details large and small: the presentation and selection of the low-intervention leaning wine program, to menu typography. Just next door, Casa Pizzeria operates as a natural extension, producing crisp, balanced and unfussy pizza, reinforcing the sense that Casa understands both craft and audience.

Grilled pork chop with sambal hijau and oyster emulsion and all the shaved onions! Yowza! @rosheen_ celebrating the launch of Secret Sauce at @casa_perth last night was a vibe and - as if often the case with Casa’s brilliant dinner club series - brought many industry folks out to Oxford Street. Is Perth’s best Mexican(ish) cooking found in a European wine bar? ⁣

It’s a thought I’ve pondered frequently at @casa_perth courtesy of glorious torched bonito tostadas, flautas filled with confit Wagin duck leg, steak tartare and pickled nopales hash browns plus that legendary pumpkin seed dip and all-time focaccia signature. ⁣
⁣
In late 2024, the Mount Hawthorn wine bar decided to retool its chef’s menus to reflect the decade that chef-partner @paulieb76 spent living and working in Mexico and the result is one of Perth’s finest eateries adding another string to an already high-powered bow (even if Bentley claims not to cook “Mexican” since he’a always considered himself a visitor to the country). ⁣

as this chapter comes to an end, I just want to take a moment to thank every single person who has made my time here what it was. a true dream come true. the friendships, the laughter, sometimes the happy happy cries of gratitude. when you see this, you know who you are… think of me hugging you every time I saw you, showing up and giving you my best. you will all be missed so much. this love story will continue, I know it.

Carbonara, but make it pizza 🍕✨ @casa_pizzeria__ has outdone themselves with this one - pecorino romano, guanciale, scamorza, onions, black pepper, and a drizzle of golden egg yolk over the top. It’s rich, creamy, smoky, and a little peppery. Who needs pasta when you can have THIS on a pizza?⁣

Best paired with a side of crisp prosciutto croquettes and garlic bread so good it’ll make you rethink everything you thought you knew about garlic bread.⁣
