Coconut, You either love it or you hate it! Which are you?

These are soooo easy to make and the fact you can top them with any chocolate you like makes them even better! I top with a little dusting of salt too for that sweet & salty taste! Mouth wateringly delicious.

🍂🍂Caramel Apple Pecan Loaf cake with cinnamon buttercream 🍂🍂

The perfect autumn bake 🧑‍🍳

Recipe:
;Preheat oven 180)
Add: 175g unsalted butter, 50g Light muscovado sugar, 200g @carnation_uk caramel (I used the drizzle accidentally but it worked fine!) in to a bowl and mix until light and fluffy.

Then add: 3 large eggs, vanilla extract, 185g plain flour and 1tsp of baking powder and mix.

Add a chopped apple and 50g of chopped pecans, fold in.

Add to a lined loaf tin and put In the Oven for 30mins. After the 30 mins, cover with foil then put back in for another 30 mins or until cooked.

Whilst it cools add butter, icing sugar, cinnamon and a splash of milk to a bowl and whisk until creamy.

Pipe onto cake and add extra chopped pecans for decoration 🍂

millionaire’s shortbread 🤎🍫

buttery vanilla shortbread, homemade caramel and a milk, dark & white chocolate topping… need i say more?

shortbread base 🍪

* 115g butter, softened
* 170g plain flour
* 55g caster sugar
* 1 tsp vanilla extract

caramel layer 🍯

* 397g carnation condensed milk
* 125g soft light brown sugar
* 2 tbsp golden syrup

chocolate topping 🍫

* 200g milk & dark chocolate, mixed
* 100g white chocolate

method ✨

1. cream together the butter and sugar, then mix in the vanilla.
2. add the flour and mix until a dough forms.
3. press into a lined baking tin, prick with a fork and bake at 160°C fan for 20–25 minutes, until lightly golden. leave to cool.
4. add the condensed milk, brown sugar and golden syrup to a saucepan. heat gently, stirring continuously, then continue cooking until thick and golden.
5. pour the caramel over the cooled shortbread and leave to cool and set.
6. melt the milk & dark chocolate and spread over the caramel. melt the white chocolate separately, drizzle over the top and swirl to create a marble effect.
7. chill until set, slice into squares and enjoy 🤎

Mint Aero Biscuit Slice Recipe 😍

These easy no bake Mint Aero Biscuit Slices are so quick to make and tastes so delicious 🤤

✨Ingredients✨

🍪 400g x Bourbon Biscuits
🥛 160g x Condensed Milk @carnation_uk
🧈 100g x Unsalted Butter
💚 181g (1 x Share Pack) x Mint Aero Bubbles

✨Toppings✨

🍫 150g x Milk Chocolate
🤍 150g x White Chocolate
🎨 Drops x Green Food Colouring @sugarflaircolours
💚 Handful x Mint Aero @nestle

✨Method✨

1- Blitz your biscuits, add them to a bowl along with the condensed milk.
2- Melt the butter, add to the mix then mix to combine.
3- Add the Mint Aero Bubbles then mix and add to a lined baking tin, smooth it out.
4- Chop and melt both the milk and white chocolate separately, add the green food colouring to the white chocolate.
5- Pour both chocolates on top and swirl. Then decorate with Mint Aero Bubbles.

3 Ingredient Mummy Dippers 👻

Possibly the easiest Halloween party treat you’ll make this October! Just three ingredients, no baking and about 20 minutes to make these ridiculously cute little mummies.

All you need is:

Sponge fingers (ladyfingers / savoiardi)
White chocolate
Edible candy eyes

Simply dip the sponge fingers into melted white chocolate, leave to set slightly, then drizzle over a little extra chocolate to create the mummy bandages. Add the edible eyes and leave to set completely.

Serve with your favourite sweet dips for dunking! I used M&S Hazelnut Crème, Carnation Caramel and Pistachio Drizzle, but Nutella or Biscoff would be just as delicious.

Save these for your Halloween party spread! 🎃

Celebrating National Baking Week with the cosiest autumn bake: soft cinnamon cupcakes filled with caramel and topped with whipped cinnamon white chocolate ganache. 🍂🧁

A lovely homemade autumn treat! What are you baking this week?

Start by making the ganache as it needs to chill in the fridge for a few hours.

Whipped Cinnamon White Chocolate Ganache

Ingredients

* 350 g double cream
* 350 g good-quality white chocolate (28% cocoa butter)
* 30 g glucose syrup
* 1½ tsp ground cinnamon

Method

1. Bring the cream, glucose syrup and cinnamon to a boil.
2. Pour over the white chocolate and blend until smooth.
3. Cover with cling film touching the surface and refrigerate for at least 8 hours, preferably overnight.

Cupcakes

Ingredients

* 205 g plain flour
* 250 g granulated sugar
* 1 tsp ground cinnamon
* ¾ tsp bicarbonate of soda
* ¼ tsp salt
* 245 g buttermilk, room temperature
* 75 g vegetable oil
* 1 egg
* Caramel (homemade or @carnation_uk uk)

Method

1. Preheat the oven to 175°C fan
2. Mix the flour, sugar, cinnamon, bicarbonate of soda and salt.
3. Add the buttermilk, oil and egg. Whisk until smooth.
4. Divide between 12 cupcake cases, filling each two-thirds full.
5. Bake for approximately 20 minutes, until a skewer comes out clean. Leave to cool.
6. Use an apple corer to make a hole in each cupcake and fill with caramel.
4. Whip the ganache until light and fluffy, being careful not to overwhip.
5. Pipe onto the cooled, caramel-filled cupcakes.
