Carobeans 33% Toasted Buttermilk Pineapple

Bought from @thescienceofchocolate, $16 CAD

I recently took advantage of The Science of Chocolate’s online shop sale and received a fresh haul of bars from makers who I scarcely, if ever, see represented outside of his curated collection. I had my eye on some of Carobeans’ innovative bean-to-bar creations for a while, and this is my first endeavor. I’ve seen other bars (white and milk) with buttermilk before, but I was sold by the pineapple upside-down cake theming - and indeed, this bar delivers on that vision! It’s a stunning, chunky bar inside a beautiful wrapper. All in matching hues, the pineapple slices perfectly melds against the toasted white chocolate. While I don’t get a particularly tangy note from the chocolate itself, it’s certainly richer and caramelized compared to other white chocolates. The pineapple adds ample brightness, though the size of the pieces makes it difficult to break apart small bites to savor the bar.

Super excited about this lovely Caranero bar by @caro_beans, oh my gosh soooo good.

The packaging alone is just beautiful .. as I got to the bar, I was astounded by its jaggery and maple aromas, not a maple bar at all but it felt warm and soothing, taking me home to my mum in Sri Lanka.
First taste was a golden jaggery cake enhanced with cardamom and clove, I missed my mum instantly because all of those notes are soaked in nostalgia and just being there with her, the notes make a subtle shift to a luscious crema Catalana with a perfectly even burnt sugar crust, the first time I had one of these in a little clay pot I was totally enamoured, close to a creme brûlée and yet a dessert like no other. The orange, lemon peel and cinnamon is so delightful you cannot ever have enough… this bar was just filled with memories .. a trip to my mum and a trip to Spain. It’s so smooth and creamy, ever so slightly smoky .. like smoked almonds .. it relaxes at the end, back to a dark jaggery that melts in your mouth, not too sweet and never overwhelming. Yum!

Carobeans Small Batch Craft Chocolate. Sweet n' Tart. Passion fruit and Hibiscus. 60% Dark chocolate.
@caro_beans

Another bar I'll reach for again and again (or as long as Caroline makes it!) This is summer in a chocolate bar. The taste has everything. Sweet, tart, chocolate, cheese. Sour apple Jolly Ranchers and Sour Patch Kids candy! The fruit tickles and tingles and frolicks all over your mouth. The deep chocolate and slight cheese flavors of the Peruvian cacao ground the flightly fruit. The feel of the bar as it melts is also smooth, like cherry and green apple Jolly Ranchers melting in your mouth. Then that pungent savory taste. The sweet-sour passion fruit and tart hibiscus inclusions are so mouth-puckering it's hard to stop eating the bar! Eating it is yet a different sensory experience. The chocolate has a very, very fine grain texture. The taste is like a gummy candy filled with a juicy, tart, sour and sweet filling spilling out, drenching your palate with luscious tropical floral fruit. Here comes the sun and she's sassy!

Carobeans. Finca Frida. Sonocusco, Mexico. 70% Dark chocolate.
@caro_beans

This bar primes you for one of the Mexico World Cup games with pepperjack cheese in the initial aroma and taste! Then acid trickles in and opens up a wealth of fruit. Unripe mango. Lime. Tart pineapple. Calamansi. Yuzu. Strawberry jam. Nutty peanut butter swirls in creating a PB&J sandwich. Light ferment and alcohol flavor invites tangy, fruity kefir. Then tropical notes and tart apples. Mouth-puckering cranberries. Lychee. The heirloom criollo cacao offers mild chocolate flavors underneath this cornucopia of fruit. It's all mixed with creamy flavors like cream cheese and yogurt. It's like a fruity cheesecake and yogurt bar with a touch of kombucha or fruity alcoholic cider. A perfect snack!

Last night was so magical… Reconnecting with women I’ve known along my journey of life, in celebration of the paths we’re all walking side by side.

What was so fascinating is that we’re all in varying seasons of change. And despite how hard some of our paths may be right now, we showed up for each other and an evening of levity, joy and laughter at @chocolatedispensary.

Last night just continued to reinforce for me that it’s not the circumstances in our lives that define us… it’s how we navigate them and who is by our side in the process.

I’m so lucky to have these women in my life.

🍫 Carobeans 🍫 @caro_beans
80% Dark
📍Vietnam - Dak Lak

-----------------

You immediately notice the colour of the cacao, a beautiful milk chocolate-looking brown - very light for an 80% bar.

This bar is full bodied and creamy. It's prominently tangy and has a mellow earthiness to it. It's a smooth 80%, without the harshness for high cacao content.

Not a personal favourite for me but certainly a unique bar with a rich flavour. Always worth a try!

I bought this bar from @thescienceofchocolate.
