$You thought we were all born with the charming smiles, an enduring love for our diners and the ability to carry four cups of coffee on our heads, as a matter of info, we weren’t. Tomorrow the team has a training day. It’s all about your health and safety and ours. This is where plate spinning, mellow wine pouring, gentle table clearing and other essential skills are perfected ensuring that there is no blood or more alarmingly, wine spilt. Coffee is caressed into the cups followed by a gentle shower of foamed milk, all ingredients landing successfully in front of our dear guests. By the end of training, our amazing team will be able to spot a vegan parking their car and will have the menu on the table by the time they walk through the door. Everyone will know how to lift, present and place a “Saturday lobster”, with the necessary weapons to eat it. Every “Sunday mussel” will be carefully laid into a bowl in a pattern resembling a Diamond ensuring each one is snuggled up against another. As anyone knows the preparation and presentation of food often includes swear words, occasionally lots….. but not in the Sea Hare. A list of allowable ‘frustration lingo’ will be practised daily. Words like ‘pshaw’, ‘thunderation’ & ‘bejabbers’ will be permitted only in extreme cases. Sinead has demanded, Sinead demand I hear you say, surely not, that she looks after this delicate area. There is never any cursing in the kitchen with Philippa so it is unnecessary for any monitoring therein. At the end of the day, having practised our twirls, speed clearing and wine etiquette, we are ready for you all.
