They really know how to throw a party in Puerto Rico!! Thanks to @laestacionpr for inviting us to celebrate their 20th anniversary block party. Seriously the best food ever, with more than 25+ cabalicious crafted dishes made by chefs and pitmasters from all over. We did a southern-Island fusion dish with local fresh caught Robalo over a creamy fried grit cake, with traditional collard greens, and a Spicy Georgia peach sauce to top it off. It was awesomeness!!

Charlie T has forgotten more about meat than most of us will ever know.

A couple years back he walked into the kitchen and said, "You should put Char Siu on the menu."

When the Godfather of Minnesota BBQ gives you advice, you listen.

Chinese-style pork tenderloin, marinated until it turns that deep mahogany red, then grilled to perfection.

Still one of favs and back on our summer menu. 🤌

Man, what an incredible Memphis in May this year. Only two things missing… Ricky Bobby and a walk on the stage. We sure came close though, 11th place in whole hog and 11th in the first ever open fire world championship. We couldn’t be more proud of our team’s performance and all the hard work!!
