Back in the lovely @che.pdx kitchen with @projectlemonadepdx Their mission: We create belonging, agency, and lasting support for youth and young adults affected by foster care. 🍋✨

Whole Grains month was last month so we made 3 dishes using whole grains. Each participant made their own version of each dish choose your own adventure style!

Fried rice made with short grain brown rice, granola made with oats, and bars made out of amaranth inspired by the Mexican treat alegría.
There were many vegetables to choose from for the fried rice, and a variety of nuts, seeds, spices and dried fruit for the granola and bars.

The reason I take this approach in my classes is that participants learn more than how to follow recipes. They learn the frameworks and techniques behind them rather than relying on exact written words. Once they understand how a dish comes together, they have the agency to create something they love based on their preferences and what’s available to them. When people understand the structure of a dish, they’re often more willing to experiment with whole grains, vegetables, legumes, and other plant foods, and discover new favorites along the way.

I shared a fried rice recipe template from @cookwithwhatyouhave - I know Katherine would have loved this class. 🩵

Can’t wait for you to taste @laportenapdx bright and herby Argentinian chimichurri at Circle V Portland 2026! Founder Jessica Viciconte will be sampling her green and red chimichurri. Come learn more about her kitchen and event space @che.pdx. We loved hosting an event there last year, and hope to do so again the future.

LA PORTEÑA
La Porteña is a Latina-owned food company dedicated to crafting premium fresh chimichurri, signature seasonings, and specialty foods inspired by our Argentine roots. Every product is made in small batches using thoughtfully sourced ingredients and authentic Andean chiles to deliver vibrant, versatile flavors.

Alongside our product line, we operate Che;, a kitchen and event space in inner Eastside Portland that celebrates food, creativity, and community. Che; was created as a space where people can host meaningful experiences in an atmosphere that feels welcoming, creative, and lived in.
