End of an era.

Tonight marks the last service at Naughtons for Rusty (Sous Chef) and Tam (Restaurant Manager).

Between them they’ve provided 17 years of hospitality to the Parkville community. Without exception they are two of the hardest working and most loved members of our family.

When we got the keys to Naughtons back in 2016 we took over an existing business which Tam had already been part of for years. We were thrown the keys one Monday night and left to figure it out. In those early days Tam showed us the ropes and in the years which followed has been a rock we continued to lean on.

Our story with Rusty runs back even further. We started working together in a London pub in 2008 (when he was only just old enough to drink beer) and our paths have remained tied since. He joined us as Naughton’s Sous Chef in 2016 and has been instrumental in everything we’ve achieved. If you’ve been here on a busy night chances are you’ve heard Rusty’s booming voice calling the dockets or encouraging the chefs to push a little harder (with the occasional expletive).

But while it’s a farewell neither are going too far… we’re currently refurbishing the beautiful @thecourthouse_nm on Errol St, which is set to reopen in March. Rusty has joined us as partner and Head Chef in the venture and Tam as our Restaurant Manager. The dream team! We are beyond excited to reopen the doors to a much loved pub lost to covid.

I love all my chats with chefs, and it is a gift to be able to sit down with them and hear their story. Talking to Ryan Berry, head chef at Naughtons Hotel in Parkville was a real highlight. Ryan is thoughtful and extremely articulate in the way he talks about cooking, teaching younger staff how to navigate chef life sustainably and with joy, and how important it is to work with ethical and passionate suppliers and producers. Naughton's is one of those beautiful pubs where the decor makes you wish it was your home. The first thing you notice when you walk in the door is the Specials board taking pride of place on the wall. Unlike many Specials boards, this one celebrates the farmers and the fishermen who provide the food on your plate. For Ryan and the team at Naughton's, where food comes from and how it is treated from start to finish is vitally important. I loved every minute of this chat and I can't wait for you to read it.
