Big congratulations to @burdockandco for retaining its Michelin star for the fifth consecutive year!

The restaurant just launched its “Radiant Radicchios under a Frost Moon” and it was fascinating to learn so many varieties of radicchio are grown locally.

@chefandreacarlson and her team have a creative menu cooking the vegetable in various ways.

* Rossa di Treviso radicchio wrapped over prosciutto and onion confit, Kabritt goat cheese, black garlic, and soubise

* Puntarelle chicory, spotted shrimp, celeriac almond milk, puntarelle and quince sorbet that was very refreshing.

Thank you to @chefandreacarlson for the charcoal-grilled abalone marinated with sake kasu, with pickled ramson!

* Sugarloaf chicory with potato and pine mushroom ragout, sugarloaf and fermented potato foam, chicory crisps. Lots of textures and very light.

Tender Fraser Valley duck breast that was dry aged and glazed with rose honey, wild rose jus, caramelised witloaf and rose hip tart. So good.

* Sea urchin gelato! Uni is an invasive species in BC and so @burdockandco has made it into a creamy umami gelato, garnished with candied radicchio, olive oil and almond

* Even dessert features radicchio! Enjoyed this ricotta mousse, plum kernel soaked hazelnut cake, radicchio jam, and radicchio and stone fruit leather

Fresh from Prince Edward Island, where Chef Andrea and the Burdock & Co team collaborated with Chef Michael Smith at the Inn at Bay Fortune, Chef Kyumin is bringing a little salt air — and a lot of Atlantic inspiration — back to Bar GOBO from October 21–25.

Expect delicious PEI oysters, lobster + crab rolls, geoduck chowder, and PEI wolffish with BC spotted shrimp bisque, just to name a few. East Coast energy, West Coast kitchen!

I recently had the opportunity to spend some time there, walk the gardens, meet the team, and sit down for a beautiful dinner from Chef Leroy Borrega. What I discovered was a place that respects its past but is very much looking toward the future. @chefleroyborrega

And yes, I even saw the table where my hero Anthony Bourdain once sat.

My latest feature for Vancouver Is Awesome is a little different. Part history, part culinary journey, and a very personal account of my visit to one of British Columbia's most storied dining destinations.

A few firsts at Bay Fortune 🔥🌿 A very special few days at the Inn, made possible by the Visa Infinite Dining Series.

For the first time, we welcomed a Michelin Starred guest chef to Bay Fortune, with Chef Andrea Carlson of Burdock & Co and sous Chef Kyumin Kim joining Chef Michael Smith and our Fire Brigade for a weekend of cooking, collaboration and inspiration.

From a tasting along Apple Cider Lane and our first picnic on the Sky Deck, to Feast and a forager’s walk, the experience culminated in a special Farmers’ Supper in our Culinary Farm greenhouse, with The Seven tasting menu, fire cooked and chef inspired hors d’oeuvres and a new rotisserie rig, all enjoyed by our Visa guests.

A beautiful meeting of West Coast and East Coast inspiration, and a chance for our teams to cook, learn and create together.

Thank you to Visa for bringing us together, to Andrea, Kyumin, Michael and the entire Fire Brigade for sharing their talent, and to everyone who joined us. Plus a special thank you to Chastity Smith for bringing the spaces and tablescapes to life. ❤️
