First day in my new @thorkitchen I had to make a steak! This fridge makes organizing so easy, and I got the new Gordon Ramsay 30” stove! It’s like I’ve got Gordon cooking with me in my own home! I also put in the 30 inch hood and it effortlessly sucks the smoke out… you know what that means, no more setting off the smoke detector 🤣!

I decided I had to go with a Filet Mignon with an au poivre sauce

Filet mignon room temp, salt and pepper generously.
In your hot skillet over high heat, add a high heat oil (your choice) sear the steak 2 minutes on both sides, then add fresh thyme, half a shallot, garlic cloves and a heaping scoop of butter and baste for 30-45 seconds. Throw the whole pan in the oven for 6 minutes. Remove and rest your steak for 10 minutes.

Discard the thyme and garlic, reserve the shallot for garnish. Don’t discard what’s in the pan, we are going to build the sauce in it.

Sauce
Half shallot diced
2 garlic cloves minced
2 tbsp Fresh course ground pepper
1/4 cup Heavy cream
2 tbsp Dijon mustard
2 tbsp Butter
1/2 cup Beef stock
1/4 cup Brandy

In the pan you cooked the steak in, over medium heat add butter and oil, once butter is melted sautee the shallots and garlic until translucent. The add cracked black pepper. Deglaze the pan and flambé with the brandy. Once the flame cooks out, add the beef stock and cook to reduce by half. Then when at a low simmer slowly pour in cream and whisk. Let it keep reducing slowly as you ad the mustard and whisk. When the sauce coats the back of the spoon it’s done.

Have fun with how you plate! Enjoy!

Most people don’t fail because they can’t do it. They don’t do it because they won’t push past the uncomfortable part.

I remember going from 3-minute open mics to a full 10-minute set and running my own show. That jump felt big. It forced me to step up, prepare properly, and deal with the pressure instead of avoiding it.

Nothing changes until you do something that actually challenges you. Not a little uncomfortable — properly uncomfortable.

That’s where growth is. That’s where you find out what you’re capable of.
