Caramel Apple Pie Muffins

Muffin Batter:

* 1 1/2 cups all-purpose flour (190 g)

* 2 tsp baking powder (8 g)

* Dash of salt (1 g)

* 2 tsp cinnamon (5 g)

* 1½ cup granulated sugar (50 g)

* 1/2 cup brown sugar (100 g)

* 2 eggs (100 g)

* 1/2 cup butter, softened (113 g)

* 1/2 tbsp vanilla (6 g)

* 1/2 cup milk (120 g)

* 1 cup apples, peeled and chopped (125 g)

Crumble Topping:

* 1/2 cup all-purpose flour

* 1½ cup brown sugar

* 1½ cup granulated sugar

* 3 tbsp butter, cold and cubed

Apple Pie Filling:

* 1/2 cups apples, peeled and sliced (190 g)

* 2 tbsp butter (28 g)

* 1½ cup brown sugar (50 g)

* 2 tsp cinnamon (5 g)

* Dash of nutmeg

* Dash of ginger

* 11½ tsp cornstarch (4 g)

* 2 tsp water (10 g)

Caramel Topping:

* Caramel sauce, for drizzling
Instructions:

Make the apple pie filling by adding the sliced apples, butter, brown sugar, cinnamon, nutmeg, and ginger to a saucepan and cooking over medium heat until the apples begin to soften. Mix the cornstarch and water together to make a slurry, then stir it into the apple mixture and cook for 1-2 minutes, stirring constantly, until thickened. Set aside to cool. For the crumble, combine the flour, brown sugar, and granulated sugar, then cut in the cold cubed butter until coarse crumbs form. For the muffin batter, whisk together the flour, baking powder, salt, and cinnamon. In a separate bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, then beat in the eggs and vanilla. Add the dry ingredients alternately with the milk, mixing just until combined, then fold in the chopped apples. Fill a lined muffin pan with the batter, add some apple pie filling to each muffin, and generously top with the crumble. Bake at 350°F (175°C) for 20-25 minutes, or until golden and a toothpick inserted into the muffin portion comes out clean. Let the muffins cool, then drizzle generously with caramel sauce before serving. #muffins #applepie #fallbaking #pie #recipes

What to do with a tiny amount 15g of sourdough starter? You can do just about ANYTHING! Just adjust the flour and liquid. That’s what @amybakesbread said so I tried it. My 2nd time using sourdough. Yesterday was the bread post. This recipe for Bakery-Style Lemon Blueberry Crumble Muffins from @cheff.omi was AWESOME! The blueberry swirl was easy and really makes the difference. #lemonblueberrymuffins #sourdoughdiscard
