Yesterday was truly amazing. Nearly a year of preparation and coordination with @folksfarmandmarket went into creating this magical evening, and it couldn’t have turned out more perfectly.

The Hearthside team absolutely crushed it. @ashycan and our entire FOH staff delivered the level of service we pride ourselves on — for 100 guests, in the middle of a field!

Our kitchen crew, working entirely with open fire, put together an incredible culinary experience that we’ll never forget.

A huge thank you to everyone who played a part in bringing this night to life. From start to finish, it was truly a perfect evening. We couldn’t be more proud of our team and grateful to everyone who made it possible. 🔥

Now that we saw the dishes, let’s find out how the blue team and the red team do with the scallop dish. And we’ll also get to see some familiar faces from last season.

“The End Cut”

This was a fun experiment. I’ve always loved prime rib—especially the end cut. This was Hearthside’s take on giving every slice that same rich, flavorful end-cut experience. We trussed it into perfect rounds, marinated it overnight, sous vide cooked it low and slow, then finished it in the wood oven. Super happy with how it turned out. We’ll keep tweaking it and definitely run it again.
