I’m not crying

I eat out a lot. I’ve been incredibly lucky to experience some extraordinary restaurants and seriously talented chefs.

But every once in a while, a meal catches me completely off guard.
This was one of them.

Chef Ryan Carbone, Executive Chef at Ore Hill and Swyft, alongside Culinary Director Tyler Anderson, is doing something pretty remarkable in Kent.

Bluefin tuna with watermelon, tomato and lemon balm. Steelhead trout with corn, popcorn, blueberry and brown butter. Strip loin with baby leek, tomme, blackberry and lemon verbena.

Combinations I would NEVER have imagined together. And somehow, they didn’t just work. They made you wonder why they hadn’t always belonged together.

And then there was the cantaloupe and anise hyssop sorbet. I will dream about that sorbet.

The service? Hospitality at a level I rarely experience. Thoughtful, intuitive and seemingly effortless.

And there’s a reason the food feels so connected to place. Much of the produce comes from nearby @rockcobblefarm whose gardens, greenhouses, orchards and fields help shape the menu as the seasons change. The relationship between farm and kitchen isn’t just a nice farm-to-table story. You can taste it.

This is the kind of meal that reminds you food can still surprise you.
