FRUIT BAT Outside my home, there is a kumquat tree. At night, fruit bats come down and take from it. What first felt like loss became my first lesson in WA. The tree is not mine alone. Some fruit is for me. Some is for them. For my House of Suntory Dojo Kaizen Challenge, I’m pairing Hibiki Harmony with a non alcoholic serve of kumquat infused verjuice, genmaicha and soft water. The genmaicha is brewed gently, allowing the water to extract, carry, soften and lift. The serve is acidified, lightly sweetened and carbonated. It can sit beside Hibiki Harmony, or be added into it. The guest chooses the final harmony. Omotenashi. Not deciding the experience for them, but giving them space to find their own balance. 📽 - @chen.atthebar #HoSdojo #suntory #melbourne #whisky #drinks

When @chen.atthebar walk in and ask for something different… 💡 Let’s make a BRAMBLE. Born in London fog, raised on wild berries. Gin meets lemon, sweetness falls, balance stays. The Bramble never shouts. It pulls you in… Cheers 🥂 #bramble #cocktailreels #melbourne #reelsinstagram #bartenderlife

A year has flown by between cocktails mixed, shaken, stirred, and countless Caviar Martinis and vintage trolleys rolling through the restaurant. A year full of changes. 🎬 I can honestly say I’ve grown in so many ways, and I’m grateful for all the amazing people I’ve met and had the pleasure of working with. A year of smiles, fun, and great vibes ❤️ This is just the beginning 🚀 Keep pushing forward 🐎🍸 P.s. big thanks to @preawck and @chen.atthebar that always kept track of our adventures through fantastic posts and videos 🫶🏻🎬 #bartenderlife#mixology#cocktailart#cocktailreels #barlife#hospitalitylife#flairbartending #cocktailsforyou#drinkstagram#instadrinks #mixologyworld#bartendercommunity#cocktailculture #craftcocktails#homebartender#speakeasybar #shakennotstirred#cocktailcreation #italiainmixology#bartenderstories
