Cookbook writing can be a drama-filled soap opera, especially when strong-willed, opinionated people have to make the book together. We wanted the inside scoop on @andreanguyen88’s first cookbook collaboration project, COOKING THAI, co-authored with Michelin-starred chef @chezpim.

But we love Andrea. How could we get the story without being too biased? For the first time ever, we turned hosting reins over to @chardrucks, a soap opera expert and co-author of LOVE IN THE AFTERNOON, AND EVENING.

Charlotte went down the rabbit hole with Andrea and Pim to unpack the challenges and thrills of making their “instant classic” cookbook. They get into the dynamics of their collaboration, from recipe testing to managing egos, and what they learned from each other along the way. There’s lots to glean here, folks.

Chef Pim's answer surprised me. When she spoke about 𝐽𝑎𝑒 𝑌𝑒𝑒 𝑆ℎ𝑟𝑖𝑚𝑝 𝑃𝑎𝑠𝑡𝑒, it wasn't just about its flavour. It was about the years of dedication, craftsmanship, and the people behind it.

I first had pad gaprao on New Year’s Eve during my first trip to Bangkok in the early 1990s. I’ve chased those same exciting flavors ever since, making holy basil stir-fries many times at home. But I didn’t truly unlock excellent results until my friend @chezpim showed me how for our book, Cooking Thai.

Pim’s version is an upscale rendition she cheekily named Bougie Pad Gaprao. While the typical street-style version employs ground meat, this premium twist features beautifully seared, juicy beef steak.

I’m sharing the recipe and pro tips from our book on my website so you can try it out. And, yes we’ve also got pointers on smart holy basil swaps, buying good beef, and how to easily build a meal around this Thai icon.

🔗 The link to the recipe is in my bio, today’s stories, and story highlights.

World-renowned Thai Chef and Restaurateur Pim Techamuanvivit (Michelin-starred for her Thai restaurants Kin Khao and Nari in San Francisco, and Nahm in Bangkok) has released her gift of Thai food in 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝑻𝒉𝒂𝒊. As soon as Uncle spots it in the bookshop, he buys two and can’t wait to take them home to peruse the delectable recipes of authentic heritage and modern Thai food, laid out in a sumptuous book of sheer delight.
Uncle zooms in on Khao Soi with Chicken, and Massaman Curry with Chicken, Potatoes, and Burnt Shallots. He has had the privilege of tasting these authentic dishes cooked by Pim; he’s tempted to cook them too as her recipes are clearly set out.
If you only buy one cookbook this year (for Christmas), 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝑻𝒉𝒂𝒊 is top of the list. On her sleeve note: “Longing to reach deeper into the richness of Thai cuisine than what’s commonly offered on restaurant menus in America, Pim set herself on a path to liberate her beloved heritage from the tyranny of peanut sauce.”
