Thank you so much to @corrigandesserts, @taradeerywine and the whole kitchen team at Salesforce for organising and partaking in this panel discussion around the ups and downs of navigating the hospitality industry right now. It’s an extremely challenging time and so very disheartening to see a never ending list of closures with each passing day.

Please please continue to support local businesses, do your research this Christmas and spend money in the places that are continuing to fight the good fight in impossible scenarios.

Be kind to hospitality staff, be patient and remember the hours and livelihoods that go in to making a memorable meal experience. Christmas is an extremely fraught time and simultaneously one of the biggest opportunities for owners to keep themselves and their staff afloat. We are only human and mistakes happen. Everyone is feeling the stress right now with these uncertain times seemingly having no end in sight.

At Salesforce, we prioritize sourcing ingredients locally, supporting small producers and farmers whose values align with ours.
One impactful initiative I've spearheaded, to mitigate our reliance on industrialized meats and food waste is employing a head-to-tail approach. For instance, we recently acquired a responsibly raised lamb from @higgins_butchers , ensuring that every part of the animal is put to use and respected. The prime cuts are utilized for our culinary offerings, all the trimmings are used for merguez sausages for our staff meals. The bones and vegetable trimmings we reserve are used to produce sauces and stocks . This is one example of many steps we have introduced to minimize our food waste, reduce food miles and our carbon foot print #YC2024entry
