Some chefs know their ingredients better than others.

Cue Austin Waiter, the chef partner at Houston’s The Marigold Club. He’s also a devoted hunter and fly fisherman, and that time in the field shapes the way he approaches the kitchen.

“When you hunt or fish, you gain an understanding of what you’re taking out of the wild, and you gain respect and appreciation for it,” Waiter says.

In last fall’s Field & Stream Journal, Waiter put that philosophy on the plate with his venison tartare: fresh venison, sauce gribiche, pickled mustard seeds, and kohlrabi vinaigrette. The recipe’s in the slides. Drop a “chef” comment & we’ll DM you the ingredients.

Chicken Schnitzel with Lemony Herb Salad by @clarkbar via @nytcooking paired with German Potato Salad by Suzanne Hamlin via @thejoyofcooking and Bacon Brussels Sprouts

Plus a few insider tips & tricks from my mother-in-law!

I was told sunflower oil is a must, but my brain short-circuited at the grocery & I bought safflower oil… #blessed it still tasted great!

The anchovy, garlic, lemon, & olive oil dressing had me nervous… Don’t let these strong ingredients scare you, it was the star of the show! Pleasantly surprised!

And of course the meal wouldn’t be complete without a few German steins!

This meal was a labor of love and worth every second to celebrate my husband & I both being off work, not on call, and awake at the same time!

How can I make it better? My husband thinks my potato salad needs some work. And I quote “this is amazing, but not exactly like my moms…” I guess I’ll have to watch my MIL make it a few more times!

Back-to-school mornings: because apparently “put your shoes on” needs to be said 47 times. 🎒🥪🥛

Thankfully, packing lunch is the easy part. A few kid-approved favorites, a Horizon Organic milk, and into the lunchbox it goes.

Shoes still not on, obviously.

No notes.

Before the week is up we wanted to give a spicy crispy Friday @holytshili shoutout to @nytcooking and their perfect weekly newsletter. Especially this past week when @beckyblairhughes truly rounded up some of our fave sauciest, sauce boss, saucy beds & blankets, boss sauce, most clicked, final boss of sauce chile crisp packed ones!

From @alexaweibel’s roasted broccoli and whipped tofu with chile crisp, a lovely squash and citrus chile crisp, silken tofu with peanut chile crisp and of course @hettymckinnon’s famous dumpling tomato salad with chile crisp vinaigrette.

We love all chile crisp, but we’re here to tell you that we have tried them all with Holy Tshili Spicy Everything Chili Crisp, packed with everything bagel seeds, sichuan chilis and sesame oil, and they all SPARKLE with spicy umami ✨🔥💥

Try them all, thank us later. And if you’re not getting the NYT Cooking newsletter, sign up bb’s…. it’s always a vibe.
