Stage at Eleven Madison Park (8/4~9)
It will always remain one of the most meaningful experiences of my life.

To stand in the dining room of the restaurant I had long dreamed of truly felt like stepping into a dream.

The passion and energy of the team were indelible.
Even in such a short time, I could feel the intensity, the drive, and the commitment to excellence that make this place so outstanding.

Above all, I am grateful for the kindness and patience of everyone who welcomed me.

My deepest thanks go to @gabriel_dibella and @adamkwaddell — for the months of Zoom calls and emails, and for making that unforgettable moment possible.

10 Years of Miami Memories

My time in the 305 is coming to a close this month as we move onto our next chapter. What started as a leap of faith from a small town Massachusetts girl chasing a dream and looking for an adventure became what feels like a lifetime of joy and love.

This city has brought me more than I could have ever dreamed within my reach and I would not be the person I am today without this wacky swamp city.

Thank you to everyone who crossed my path - each of you has left a beautiful little thumbprint on my soul. I remember it all and will always carry you in my heart.

In this month's issue of @fsrmagazine, we are proud to see our Master Sommelier and Director of Education, Mia Van de Water, who sheds light on COTE's in-house wine education programs for our employees at no cost. These programs include our six-month sommelier internship, COTE College, and Wine Wednesday.

Here's what @miavandewater has to say about our in-house hospitality education, expertly crafting the next generation of sommeliers:

“It’s essential to invest time and energy into education and training because the most important thing is your team can walk up to the table, read the guests accurately and skillfully, and use information from the first 15 to 20 seconds of talking to build a full experience,” explains Mia Van de Water. "Team members learn better when they have a conversation and talk about what the wine is way more than if they just listen to what you’re saying or read what you wrote down,” “It’s always been important to us to create a restaurant culture where people come to work because they feel energized and respected, not just because they make money, and it’s really valuable to work somewhere you feel is actively invested in teaching, mentoring, and coaching you to help you grow whether you grow with us or somewhere else.”

So profoundly grateful that @cote_nyc was nominated by the James Beard Foundation in the "Outstanding Wine Program" category. Thank you @beardfoundation for having us last night in the beautiful Lyric Opera of Chicago, and an enormous congratulations to all the winners and nominees who embody the spirit of excellence and dedication to their craft.

A big shout-out to @simonkimnyc for the unwavering support over the past decade, allowing me to do some crazy shit for our beverage programs and continually pushing us to be better. Of course, the yin to my yang— my work wine sister and gorgeous human, @miavandewaterms (Meebles 💕!). & of course our badass NYC wine team!!! Wine Manager @hanna_kyle (tragically not photographed here but in our hearts!) and our somm team of @amandabaim_, @imnotyourmom93, @classic_chepi, @hannahmilic. Lots of love to the whole COTE NYC team who sings the wine gospel every night for our guests!

None of what we do would be possible without the incredible support and trust of our loyal partners and guests. Your enthusiasm has inspired us to continually push the boundaries of what is possible in the world of wine – magnums by the glass (!!!), a paid sommelier internship program, tuition-free wine education to all staff, and a platform where we are able to lift up women and BIPOC winemakers and growers focused on sustainable practices.
