Mootz was a beloved pizza restaurant that closed earlier this year. But it’s been resurrected in food truck form, and Chef Collin Adkisson is creating some of Omaha’s best pizzas out on the streets!

In the Hoppen family, pizza is our love language.

And when Sarah suggested we forgo fancy Valentine’s Day dinner plans for Mootz (@mootz_) pizza on the couch, it served as reason No. 991037421 why I love this woman so much.

Mootz is fantastic every time, as Collin Adkisson knows how to work his pizza oven like a boss. Each pizza features a solid, crispy base and an outer crust with good bite. And the pizzas are extremely digestible; even after eating an entire pie, you feel good, not weighed down by grease or wanting to take a nap.

I opted for the straightforward but fantastic simplicity of the Margherita pizza, and the freshness of the basil and the milky gobs of fresh mozzarella complemented the tangy sauce beautifully. Mootz allows for ultimate customization, so I added two components. The first, jalapenos, was a mistake, as the heat disrupted the elements that make a margherita pizza special. But the second, garlic confit, was an excellent addition I’ll be putting on my Mootz orders going forward.

My wife got a half pepperoni/half chicken pesto. The pesto was bright and herbaceous, but the clear winner on that pizza was the side with the crispy, salty, curled-up pepperonis.

And on Valentine’s Day, Mootz went to the effort to shape each and every pizza into a heart. Sometimes it’s the little things that make a meal special.

Normally for us, Valentine’s Day is an excuse to dress up and splurge a bit at an upscale restaurant. I still love doing that, but as Sarah and I snuggled up on the touch with a Top Chef binge and Mootz in our laps, there was no other place I’d want to be.
