Pollo Asada Burrito Bowls

I was inspired to make these Pollo Asada Burrito Bowls after watching @corysbackyardbbq’s reel.

Fired up my @biggreenegg XL using @thegoodcharcoal Premium Acacia Hardwood Lump. Grilled the chicken hot and fast over direct heat until they reached an internal temperature of 175 degrees. Removed them with my @shark.tongs Pitmaster 17” Long-Reach Tongs. Let rest before dicing the chicken thighs. Served it over some Spanish rice, diced red onions, cherry tomatoes, sour cream and green sauce. They were a huge hit with the family, and the marinade was absolutely out of this world.

One thing I love is “shopping” my own pantry and freezer before heading back to the grocery store. Over the years, I’ve learned that with a little creativity, ingredients from previous meals can become something entirely different.

This week, I wanted a break from our usual Al Pastor tacos and went searching for inspiration. After a quick internet search and taking inventory of what I already had in the refrigerator and pantry, I found an idea that sparked a new dinner plan.

Using fresh H-E-B tortillas leftover from breakfast tacos, Mi Tienda Al Pastor from last week’s grocery run, fresh cilantro, microwave cilantro rice from my bulk meal prep, Adams Reserve Pineapple Mango Habanero Sauce (normally a crowd favorite poured over cream cheese with Ritz crackers), Mi Tienda enchilada sauce, dried cilantro from the H-E-B bulk spice aisle, Central Market Adobo seasoning, red onion, green bell pepper, garlic cloves, and H-E-B Mexican Style Cheese—I prepped tonight’s dinner ahead of time.

I love stretching ingredients, reducing waste, and discovering new family favorites from what we already have on hand.

Egg Roll in a Bowl!!! One of my favorite recipes from @corysbackyardbbq

Delicious!!!

-Cook 2.25 lb Ground Beef until no longer pink.
- Add 1/2 finely diced Red Onion and shredded carrots, cook 5-7 minutes or until Onion is softened.
Add 3 minced Garlic Cloves and cook for 30 seconds. Season. I used @meatchurch Blanco.

Add:
• 3 cups Shredded Cabbage (I used pre shredded bags
-1/4 cup Soy Sauce
• 2 tsp Sesame Oil
• 1 tsp Ground Ginger
* 1/3 tsp Sugar (I used @splenda )
-Cook 5-7 minutes or until Cabbage is tender.

Cook an egg to your liking and place it on top.

Drizzle some sriracha and @melindasfoods Japanese bbq sauce until nice and sticky.

-plate:
Steamed White Rice
Green Onions
Sesame seeds
Fried egg
Candies Spam

Smoked Jalapeños Poppers

Let’s get real, our favorite team is going to hurt our feelings this year so we might as well eat good while watching.

I love snacks and so my kids, so these are quick, easy & delicious.

Get your @biggreenegg to around 275 degrees while you prep the jalopenos.

Next get a block of cream cheese and 1/3 cup of mozzarella. I added Holy VooDoo from @meatchurch

Spread the cheese mixture on the jalapeños and wrap them in bacon (cut bacon in 1/2 before wrapping)

Sprinkle a generous amount of The Gospel on top before putting on smoker.

Smoke for an hour or so until Backn is fully cooked and enjoy!
