⏱️5 minutes with @beccalewis of @dongnaebristol

We’re asking Bristol insiders what they’re drinking & where they’re sipping it, to give you lot some drinkspiration when you’re thinking about your next bev.

Today we’re getting our drinkspo from @beccalewis. Let’s get into it shall we?

1. Current go to cocktail?
My current go-to cocktail has been rooted to the gold medal podium far too long to be classed as ‘current’ but my unwaveringly go-to is a whiskey sour. I’m a whiskey lover anyway but I adore the texture and tartness a sour brings.

2. One Bristol drinks spot everyone should know about?
My usual haunt for a cocktail in Bristol is @cryingwolfbar on Cotham Hill. Always a vibe and such welcoming service. Tonnes of delicious & precise cocktails that I usually double park myself with an icy cold schooner. Also they do cheese toasties until last orders…a post service midnight toastie is a heavenly experience.

3. Last great cocktail you had in the city. What, where and why did you love it?
Latest greatest cocktail I’ve had was a Boulevadier kissed with absinthe from Lexi over at @barrouxbristol . A lip smacker. I’m not sure it had a name but maybe @_lexigood could correct me..?

4. Next round. Where are you heading next?
It HAS to be @same.again.bristol. All the drinks look phenomenal, I’m itching to go!!

5. Tag a Bristol legend we should ask these five questions?
Shelbie from Carmen Street / Caper&Cure
Up for it @shelbman?

We’re asking Bristol insiders what they’re drinking & where they’re sipping it, to give you lot some drinkspiration when you’re thinking about your next bev.

Next up is @pippaguy of @same.again.bristol. Let’s get into it shall we?

1. Current go-to cocktail?
Spicy Marg - They are EVERYWHERE at the moment, so the overall quality is just getting better and better - more depth of flavour and interesting combos, as a spice lover, I’m fully here for spicy marg summer.

2. One Bristol drinks spot everyone should know about?
I went to @cryingwolfbar a few weeks ago for the first time and the service was outstanding, the team really made a lasting impression. The bar is super vibey and a great little spot in a bustling area of Clifton.

3. Last great cocktail you had in the city - what, where & why did you love it?
Cinq at @hmss_cocktails - I’m a sucker for a champagne cocktail and the ritual with the sea buckthorn palate cleanser is ace, but I won’t ruin the surprise. Go try it!

4. Next round - where are you heading to next?
As I’m invading @booze.and.things trip to @silk.bristol, I’ll throw another one in the mix - @theshoesboa in Bradford on Avon. I hear @gb_bartender has been colliding cocktail bar with pub culture, putting on some awesome whisky events and live music, so i’m stoked to get over and try it out!

5. Tag another Bristol legend we should ask these five questions 👇
I recon Dan O’Regan has some great spots for us…
Up for it @doregan1?

CARNITARITA

#margaritamasters | #margaritamasters2026 | @altostequila | @pernodricarduk

45ml Carnitas washed Altos Reposado
25ml La Tomato
20ml Lime Juice
15ml Shallot, Coriander and Chile de Arbol oleo
Garnished with a skewer of Queso Oaxaca, Tomato, Jalapeno and cute lil peppers
—
In my humble (and generally correct) opinion, there are few things better than Mexican food.

Quesadilla? Hell yeah.
Chilaquiles? Huevos Rancheros? The BEST breakfasts.
Tamales? Tacos? Barbacoa? Mole? BRING IT CHEF.

Hence, I wanted to dedicate this drink to Mexican cuisine – specifically one sandwich in particular called Torta Ahogada. This sarnie originates in Guadalajara, Jalisco, not coincidentally the same province Altos Tequila originates also. Torta Ahogada literally means drowned sandwich (dumb name I know but most things are like that to be honest).

In essence, it’s a pork carnitas in a crusty bread roll (specifically Birote Salado) and then drowned in a spicy, rich sauce made generally from Arbol chillies, tomatoes and some other bits. Served on its lonesome usually but sometimes is served with various veggies.

So naturally I took that and went “how do I make this work? I know! STICK THE MEAT IN THE BOOZE”. So I did that with the Carnitas washed Altos. Then I wanted to capture the flavours together of the dish without losing the premise of the drink – it is a Marg after all.

In summary therefore:

Instead of triple sec…I chose La Tomato. Hey, it’s a fruit (technically) based liqueur but savoury rather than the usual sweetness from triple sec

Instead of sugar or agave…I made a Shallot, Coriander and Arbol Chili oleo to capture the vegetal and spicy FLAVAAAA

Instead of lime juice….yeah I just used lime juice sorry #ifitaintbrokedontfixit

Sounds good right? I thought so. Tell you what though, it fuckin is dude.

Needed a garnish though, so went all out with a cheeky lil skewer of vegetables and cheese. After all, what is a pleasurable life without cheese?
