I love cooking because I can be creative, and I typically fail miserably at baking because there are rules involved, and following rules is not one of my finer skills (which is also why @bunner, @torisbakeshop, @newmooncookies & @sftebakery have me as a loyal, frequent customer for #baked goods and #desserts in #Toronto!). BUT, I managed to figure out a #muffin that is really simple, delicious and lisa-proof. These #muffins are best eaten warm, fresh out of the oven (not as good next day, unless I slice it in half and make it into an ice cream sandwich with @lunaandlarrys #coconut bliss!). The #recipe is really quick to make, is #vegan, #glutenfree, and #nutfree, flavoured and sweetened with ripe, #fairtrade bananas, #maplesyrup, vanilla and cinnamon, and baked with added pea #protein – great with #chocolatechips or #blueberries. Side note: I love my lead-free clay bake and cookware - my secret to roasting crispy sweet potato fries!
