It’s been a busy day of fun, but I wanted to post a HAPPY BIRTHDAY to our “little peanut” 😅, our precious son! 🥳💙🫶🏻

You’ve always had the sweetest heart, so thoughtful, loving, funny, kind, fiercely loyal…truly, one of the best people I know!
You have a deep, quiet strength, and make everyone around you feel loved and cared for! 🥰

You’re not only a son, but a best friend ~ with wisdom beyond your years! (You have taught me so much!) And you consistently show up for your people, with a big smile on your face! The world is sweeter with you in it! 🫶🏻

Thank you for being YOU, Caden! We are proud of the man you are, and feel so honored to be your parents!! ❤️❤️
WE LOVE YOU more than words!!

Wishing you a year full of BIG blessings, and dreams coming true!! 💫🙏🏻

G.R.I.T.S.: Girl Raised In The South - Cooking With What You Got!

Y’all know how we do down here! A true southern girl doesn’t let a little challenge stop her from whipping up something delicious. When it comes to feeding the family or just yourself, it’s all about making magic with what you already have. That’s the essence of being a G.R.I.T.S. - Girl Raised In The South!

Today’s creation? Smashed Potatoes with Beef - hearty, simple, and oh-so-satisfying. Here’s how I did it:

1. Grab What You Got - I had some potatoes on hand and a little ground beef in the freezer. Seasonings? Whatever’s in the cabinet!

2. Smashed Perfection - Boil those potatoes until they’re soft, then smash them up with some butter, salt, and a touch of garlic.

3. Savory Beef - Brown that ground beef with onions, bell peppers (if you’ve got them), and a few spices to kick up the flavor.

4. Layer It Up - Top those smashed potatoes with the beef mixture and a sprinkle of cheese if you’ve got it. Pop it under the broiler just to melt everything together.

5. Serve with Love - Because down here, that’s how it’s done!

It’s more than just food - it’s resourcefulness, creativity, and a whole lot of soul. Whether you’re cooking for one or feeding the whole crew, being a G.R.I.T.S. means making the best of what you’ve got and turning it into something amazing!

What’s your favorite dish to make with what’s on hand? Let me know!
