Your salmon isn’t crispy because nobody ever taught you — read this, you’ll never make it any other way. 🔥

Here’s exactly how to get that shatteringly crispy fish skin every single time:

① Score it first. Take a sharp knife and make shallow cuts across the skin — not through the flesh. This stops the skin from curling up and lifting off the pan when the heat hits it.

② Fridge overnight — uncovered, skin-side up. This is the step most people skip and exactly why their skin comes out soggy. No moisture = no steaming = pure crispy perfection.

③ Season RIGHT before cooking. Not ten minutes before. Literally right before it hits the pan. Salt draws moisture out — don’t undo overnight work in ten seconds.

④ Get your oil shimmering hot. Use oil with a high smoking point like avocado oil, light olive oil, or ghee. When the oil ripples and shimmers? That’s your green light.

⑤ Skin-side down — and press IMMEDIATELY. The second it hits the pan, hold your spatula firmly down on the fillet. Full contact.

⑥ Don’t. Touch. It. Leave it alone for 3-4 minutes. The crust is forming. Trust the process.

⑦ Slide a spatula under — if it releases clean, flip it. 30 seconds on the flesh side and you’re done.

Takes less than 10 minutes. Perfect for a quick dinner 🍽️

Save this before you forget—
because once you hear that crunch, there’s no going back.

How I shop at the Grocery Store as a Chef 📝

Welcome Back to Chef School. Today’s class will be a field trip to the grocery store. Quality control is mandatory for Michelin restaurants. The same principle can be applied to home cooks to ensure food safety and high quality whilst being cost effective. I’ve included tips that I’ve learnt over the past years that you can utilize when purchasing ingredients on your next supermarket trip.

Have you tried any of these before? Let me know in the comments!

I spent my career in Michelin-starred kitchens mastering the details.
Now I’m here to teach them to you.

This is the start of a new space where I break down the fundamentals, the way chefs actually learn them — clearly, creatively, and with purpose.

Cooking isn’t hard.
It’s technique.

Because restaurant-worthy food isn’t about complexity.
It’s about control.

This is where we start.
Welcome to the fundamentals.

Follow along — the fundamentals series continues next week.
