✨🍄 MUSHROOM FOOD

This year’s food options include:

LIONS MANE STATION
Sebastian Bundajev, the Lions mane steak guy as we call him, studies gastronomy at the University of Kristianstad. He says ‘’I want to try to combine a good life and good health through quality food, so we can avoid taking medication unnecessarily when a simple dietary change might be all that’s needed’’.
Sebastian will be open from 12 until he runs out!
Catch one of his steaks while you can <3

THE AMANITA
Svampfestivalen proudly presents The Amanita, where chef Jack Guyonvarch will wield his magic. Normally the head chef at Caffe Nizza, he will make four dishes with mushrooms center stage, both filling and elegant - “Folksy fine dining”. There will also be a wine selection and local beer and cider, and non-alcoholic äppelmust from Rosenhill.

THE DEVIL’S TOOTH WINE BAR
The festival also presents The Devil’s Tooth Wine Bar, spearheaded by wine mage Daniel Wirtberg. The bar will serve a broad selection of wines from small scale producers, along with hyper local beer from Stockholm Brewing (located about 100m away) and cider and of course the famous Rosenhill äppelmust. The Devil’s Tooth will stay open until 01:00 (inside Frihamnstorgets hall from 22-01).

SAUERBEE
Sauerbee is joining us, as usual, with his amazing mushroom focaccias.
Khaled will also be serving taste coffee and hot chocolate! They may or may not be mushroom-infused… ask him yourself!

PEDALLING PIZZA PALACE
These guys also won’t disappoint, bringing their freshly oven-baked pizzas with a big variety of flavours, starting with fungi, of course!

✨🍷 Living wine - an exploratory tasting

Duration: 45 mins

Time:
#1. 15:45 - 16:30
#2. 18:00 - 18:45

What happens when wine is allowed to retain more of its own energy - without industrial treatment? When grapes ferment with their naturally occurring yeasts and not with chemical additives? During this tasting, we explore living wines with a clear sense of place, origin and personality. We taste wines that in different ways have a kinship with the expression of the fungus - through earthiness, forest, umami, rot, minerality - or something more elusive. We taste four natural wines that differ in several ways, but which all carry energy, nerve and character. We talk about terroir (French for the uniqueness of the growing location), natural winemaking and what can arise in the meeting between wine and fungus - how aromas, flav

Joya: AiR / Daniel Wirtberg / SWE

“Spending two weeks at Joya: AiR was truly enriching. I enjoyed ample space and mindspace, with my own writing studio, surrounded by a visually stunning landscape that fostered creativity and reflection. The isolated setting, with the majestic mountain valleys just outside and a thinker’s bench overlooking it all, offered the perfect environment for deep work and introspection.

Evenings were particularly inspiring, featuring artist presentations just before dinner, where we shared practices and sparked new ideas. The tranquility of Joya helped me recharge and focus, and I slept incredibly well — my dreams were unusually vivid and thought-provoking. Grateful for this peaceful haven to develop my feature film project and its presentation materials”.

Daniel Wirtberg

Daniel is a Swedish film director based in Stockholm. After graduating from FAMU (the Czech film academy in Prague) in 2003, Daniel has been freelancing within the film industry and has experimented thoroughly with imagery, expression, shooting formats and techniques.
