Sfoglia Lorda or Spoja Lorda in dialect, literally meaning ‘dirty dough’. Originally from the Romagna half of Emilia Romagna, these simple beauties (also known as Francobolli or Postage Stamps as well as Cuscinetti or Little Pillows - that confusing situation where you have one shape with multiple names) were conceived to use up leftover cheese 🧀 filling from making Cappelletti and were then served in broth. 🐓 During yesterday’s online pasta class on Filled Pasta, I showed my students the technique to making these with the leftover filling made with Ricotta, Parmigiano, lemon zest and cinnamon after the other stuffed shapes had been exhausted. Today I served them tossed in clarified butter, cinnamon and a drizzling of minimum 12 year aged PDO Traditional Balsamic Vinegar, paired superbly due to the vinegar’s distinct flavour profile (but that’s another story 😁). The Filled pasta class was really popular so am thinking about doing another one making different shapes. Would you be interested? What an intensely wonderful and uplifting weekend of online pasta classes from my kitchen on @zoom. 💫🎉💫🎉💫🎉💫🎉💫🎉💫 Here are few shots from my side and thanks to those who sent me a couple of photos from ‘the other side’. If I haven’t tagged you it’s because I haven’t managed to put together name + Instagram handle! Also apologies to the first class for not doing a screenshot! Kudos to all of you who made such a huge effort to do everything ‘live’ and thanks for your kind emails saying how much you learnt 😁.
